They are two different inks made by the same company, Tsukineko. Versamagice is a pigment ink. Versafine is an oil based dye ink that was created for fine detail stamping. Momento is a new name for an old ink from this same company. They used to have a dye based ink called Impress, they reformulated the ink, created some great new colors and gave it a new name. Momento is a VERY fast drying dye ink.
You can emboss with both Versamagic and Versafine ink. You can not emboss with Momento.
If you turn your ink pad over there is a plethora of information that will tell you on what surfaces a particular ink can be used. There are also 'ink charts' available that can be used to compare inks and what they will and will not do. You may want to check your local rubber stamp store to see if they have them available.
