Pumpkin Toffee Cheesecake

Crust
1-3/4 cups (about 14-16) shortbread cookies, crushed
1 tablespoon butter, melted
Combine cookie crumbs and butter in small bowl. Press into bottom and 1 inch up the side of 9 inch springform pan. Bake at 350 degrees for 6-8 minutes. Do not allow to brown. Cool on wire rack for 10 minutes.

Cheesecake
24 ounces cream cheese, softened
1-1/4 cups packed brown sugar
1-15 ounce can of canned pumpkin
1-5 ounce can of evaporated milk
2 large eggs
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1 cup (about 25-30) crushed toffee candies
Beat cream cheese and brown sugar in large mixer bowl until creamy. Add pumpkin, evaporated milk, eggs, cornstarch, and cinnamon; beat well. Pour into crust. Bake at 350 degrees for 60-65 minutes or until edge is set but center still moves slightly. Remove from oven; top with toffee candy pieces.

Topping
8 ounces sour cream, at room temperature
2 tablespoons sugar
1/2 teaspoon vanilla extract
Caramel ice cream topping (optional, but not really optional!)
Combine sour cream, sugar, and vanilla extract in a small bowl; mix well. Spread over warm cheesecake. Bake at 350 degrees for 8 minutes.

Cool cheescake completely in pan on wire rack. Refrigerate for several hours or overnight. Remove side of springform pan. Drizzle with caramel topping before serving.

Oh now these recipes really have my attention! I am the cookie queen and I love white chocolate and orange together! Will try these this weekend. Hope I don't burn any while I'm stamping as they bake.
I just found this thread this morning and I have just been reading through everything and collecting recipes. They all sound great. I've been telling my husband he needs to eat more protein so I will make the quinoa recipe for him as a side dish some night when he's home for dinner. (Guess I should say when I'm home to cook dinner, that is usually why we eat out or have a heat and serve meal.)
I will post a recipe soon. TTFN Pat

Thanks for the hellos! It's great to be here and make a difference in someobody's life. I had 2 chemo angels and it was great to get mail from them.

I'm so far behind already! I do have some cards done, just need to get pics and upload. DD has homecoming tomorrow and a soccer game at 11am which means she's got team dinner tonight. Somewhere we have to fit in hair, eyes, nails, and toes. If I survive I plan to get caught up on Sunday. lol

Even my cd player is broken and gone so I can't even play music. So I go out almost every day for lunch with friends and by the time I get home again I have lost motivation to accomplish much for the rest of the day.
But today (after lunch) I will make cards (after I cut the grass)(while my laundry is in the washing machine). See there is always plenty to do to keep me from just sitting in my stamping room and having fun.
Some day I am going to get to your neck of the woods. I've been close a couple of times but have never made it to the state of NY. I have enough points saved up for another ticket though so watch out.

Thanks! I use turkey bacon instead of real bacon - LOOOOOOOOVE turkey bacon! if you haven't tried it, I highly recommend it!!

I remember someone was asking for healthier recipes :-)

We make this at home at least once a month (we like Indian, Thai, Moroccan, etc... flavors)

I don't serve these in pita.. I just serve them with lettuce leaves to wrap around the patties... They are really YUMMY!!!

Tandoori-Style Chicken Burgers
1 1/2 pounds (4 to 5) boneless, skinless chicken thighs, cut into rough chunks
4 scallions, thinly sliced
3 tablespoons chopped fresh ginger (from a peeled 2-inch piece)
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
1 tablespoon paprika
2 teaspoons ground cumin
1/2 teaspoon ground cardamom
1/4 teaspoon cayenne pepper
Coarse salt and ground pepper
Vegetable oil, for grates
4 (6-inch) whole-wheat pitas
1 cucumber (8 ounces), halved lengthwise and thinly sliced on the diagonal
1/2 cup fresh cilantro sprigs
Cumin yogurt sauce

Heat grill to medium-high. In a medium bowl, place chicken, scallions, ginger, lemon juice, paprika, cumin, cardamom, cayenne, 1 1/2 teaspoons coarse salt, and 1/2 teaspoon pepper; toss to combine. Set aside to marinate, at least 10 and up to 30 minutes.

Transfer chicken mixture to a food processor; pulse until roughly chopped, but not pasty, 10 to 12 times. Gently form mixture into sixteen 3/4-inch-thick patties (about 3 tablespoons each).

Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season patties with salt and pepper; grill until opaque throughout, 2 to 3 minutes per side.

Halve pitas crosswise (toast on grill, if you like). Into each pocket, place 2 chicken patties, cucumber slices, and cilantro sprigs. Serve with Cumin Yogurt Sauce

morning
woke up at 2 am to the sound of hubby fiddling with the thermostat. Seems the fan started up for no damned good reason and it dipped to below 50� last night so our house was getting pumped with cold air. I had to keep waking up and turning the temp up and up to get some warmth in. Our electrical company has come out and inspected it. At least he showed me that it was ok to turn of the damned thing at the breaker. Gonna have to save up for that repair.

I've just hit $225 yesterday. I was feeling a little panicky. This time last year I was above that. My goal is $5000 again. And I'm trying to get together a team this year.

I saw that you were receiving donations again - but with holidays and reduced hours and pay my last wage packet was not worth mentioning. Next month should be (a bit) better.

Seriously if I didn't have to hold it all together for the kids and life in general I'd be flipping out. There's no money. I just recently sold some gold for Christmas money that now seems like it will go towards repairs. Frustrating.

I know what you mean. I can remember my mum borrowing our pocket money back from us - she must have been really pushed to do that.

Because of your post and Victoria's recipe I won't get a card made before lunch. I saw "BrownSugar Cupcakes" and I was hooked. I just experimented with a chocolate cupcake with a ball of chocolate chipe cookie dough in the middle. It was not quite what I had envisioned, although it did taste pretty good. I want the cookie dough to remain more gooey so I have to experiment some more. But the Brown Sugar cupcakes sound heavenly especially with the cinnamon drizzle. More cupcakes may be on the way tonight.

Yum yum, I think I'll be trying those tandoori style burgers. We eat Indian twice a week most weeks. I buy BIG bags of cumin seed, and I couldn't believe it a couple of weeks back when I needed more than normal for a church lunch and I was almost totally out of it. TG I keep a jar of roasted seeds ready for grinding and I just scraped by with what I had.

Wow - there are some fabulous cards in the gallery! I've just had time to browse through a whole page before we go out this evening.
But they're definitely sorting oddly for me - I'm starting to think it's by last comment, even though the bottom says posting date. I keep having to go in and change the settings every time I want to view the whole gallery.
Catch y'all tomorrow, time to turn the PC off and get geared up.

I was surprised to hear that overall unemployment is as high as 9% in the States. And I've heard some horrific figures for youth unemployment in certain areas...Over here it's like the seventies and eighties all over again. And I don't remember before that, but I guess it was like that for decades before, too. Last year was the first year in over a decade that we had net emigration. But you don't hear of so many people going to the States - I think Australia must be full of Irish people looking for work!!

Mailed my first batch of cards today and getting ready to head downstairs to make a card for today's challenge.. Love the color combo.. I've been itching to use some patterned paper from the DCWV Lemon Flower Mat stack!
