Now before you think I've lost my mind (which I have!), there's a correct challenge here. My card is of a Swedish Cow (note the blue and yellow for the Swedish flag), because my recipe is for Swedish Meat Balls. All the circles are to represent meatballs, but of course they are not BLUE!!
My grandparents came from Sweden. Karlskrona to be exact. Grandma (Farmor) gave me all her recipes which I have followed religiously all my life. Luckily, she was alive until her late 80's, so she could oversee my cooking!! If you have a hankering for Sylta or Kruppkakor, let me know. We'll be having them too! YUM!
Here is her recipe:
2 1/2 lb. ground beef
4 slices WHITE bread
3/4 c. milk
1 onion diced
1/8 tsp. nutmeg
1/8 tsp. allspice
1 clove garlic
1/4 tsp. pepper
2 tsp. salt
2 lightly beaten eggs
Crumble bread. Add milk to make a paste. Combine with meat. Add seasonings and eggs. Dip out rounded tsp. and roll between hands lightly (about 1" balls). Cook in small amount of fat. Makes about 70.
I made these yesterday and put them in the freezer. I doubled the batch, and will have none left.....they go really fast. You can make a cream gravy out of the drippings left in the pan, but not necessary. They are moist enough!

Oh Anne, I am looking forward to trying these! Yum yum. Danish colours, too - we had the Queen of Denmark visit when I was in school, I can still remember having a blue and yellow flag to wave. Love your fun card too - so imaginative.
