I plan on stamping today. Am home with female problems. So I also decided to make something in my crock pot. Thought I would share this recipe. I had it the other day at a school wide dinner.... was mmmmm good!
Reminded me alot of Rotel dip.... maybe that is why I liked it soo much!
1 lb. ground beef
1 lb. Velveeta
1 15 oz can of corn
1 14 oz can of rotel
1 14 oz can of stewed tomatoes
2 tbsp. taco seasoning mix
corn chips or tortillas
Brown your ground beef. Then add it to the other ingredients except the corn chips and tortillas.
Cook in the crockpot for 3 hours on high. Serve over corn chips or dip tortillas in it.
I tried to find that other crock pot thread (where the stamper was stamping while dinner was cooking) and did not find it after 13 pages of searching...
Thanks!! I'm stuck at home because of the ice today so maybe I'll give it a try. It's going to be a scrappin' day for me if I can just get those chores done. I guess it would help if I was off the computer!!
Rotel is a brand of tomatoes that are mixed with green chilis. I usually find it in the mexican food section of my supermarket where they have the salsas and such.
