Baby wipes, paper towels and sanitizing hand gel (for StazOn if used quickly enough). Also, my kitchen is really close to where I stamp and I have a container of powdered hand soap (Boraxo by Dial) that is great for getting stubborn inkstains off AND leaves my hands feeling soft (not something I'd have expected from a powdered soap my FIL the construction worker used to use).
I also almost always replace the lids on my inkpads - do it often enough it becomes second nature. And I have lots of brads, ribbon, etc. for embellishment opportunities.
I did try wearing latex gloves but found I got more ink on my cards since my fingers didn't feel "inky" and I'd forget to look before continuing to create.
ETA: I usually stamp on a board (probably MDF) my DH cut to fit sheets of SU's grid paper that I cover with wax paper. I can still easily see the grid but can use a baby wipe (works best if it isn't too wet) and paper towel to clean off ink, glitter and paper confetti from punching. Plus it's cheap enough to replace as needed.
Happy Crafting!
