I don't know if you're looking specifically for SU! but I did these two last year (some of my first stamped cards, I'd only been stamping for a couple of months!)
Christmas Cow
Swirly Bird
and I used a backgrounder for this week's sketch challenge and made a Christmas card with it:
Ornamental Christmas
I've seen quite a few done with Lovely as a Tree (both the stamp that is Christmas tree shaped and the bare trees done on a brayered sky with a 'snowy' foreground) - worth a look in the gallery.
I love coming up with different ways to use a non-Christmas stamp - have fun!

I LOVE this card I made a few years ago. It's such a stretch for my style, but I was so proud to use a non-Christmas set to make a holiday card!

I don't have pictures but I found some stamps I had of pine bough branches and I am planning on making ornaments by using some circle stamps and some random stamps to decorate the circle and putting a ribbon at top to "hang" it from the bough to make a card.
