I don't think there is one particular set that's "easiest," but I like to show one that is very versatile. I think rather than a set that's easy, you should show a card (or whatever project you're doing) that is easy, but looks really sharp. There are tons of examples around here for cards - I've even taken some that were more complicated and simplified them for showing at a demonstration. Decide what you're going to do, then practice it a few times so it will be second nature to you.
Completely off topic, I noticed you are in WV. I live in Louisiana, but I type for a national transcription company and my account includes the three Charleston Area Medical Center facilities. I get to type on people slipping on ice - something that almost never happens in Louisiana, unless the ice is dropped from the freezer or something!
