I love baking these mini pumpkin bread loaves for teacher's and friends this time of year. I used Thoroughly Thankful for the first time to make these recipe cards with tags. My 6 year old DD watercolor penciled & blended them all by herself! I think they turned out so cute and of course the pumpkin bread is yummy as always. :) Here is the recipe for my SCS friends:
Preheat oven to 350 degrees. Combine in a separate bowl all dry ingredients, using a wisk to incorporate well. In a large mixing bowl, add sugar, oil, pumpkin, and eggs and mix well. Add dry ingredients to large bowl of pumpkin mixing thoroughly. Grease pans. Pour batter into 2 large loaf pans or 5 mini loaf pans. Bake for 60 minutes for large loaf pans or 45 minutes for mini loaf pans. You can substitute the pumpkin with bananas, sweet potato (1 1/2 cups), and shredded zucchini. Once cooled, wrap loaves tightly with plastic wrap. For best results let loaves rest one day before eating, so the flavors can intensify. You can also add 1 cup of chopped nuts mixed with 1 tbsp. flour to the batter before pouring into pans. Happy baking & happy Thanksgiving!

My son is on the autism spectrum and loves pumpkin bread ( he eats very few things). I bought some pumpkin today at his request but didn't have a recipe! This is perfect, really caught my eye and I am so glad to have a recipe now!
