I cased this card from SCS for my Sugar Free Banana Pudding that is always a hit when I take it anywhere : )
Stacy's Sugar Free Banana Pudding : )
Bananas (around eight bananas)
1 large & 1 small Sugar Free Instant Vanilla Pudding
Milk (I use 1%)
4oz Sour Cream
2 tubs of Sugar Free Cool Whip
3 boxes of Sugar Free Vanilla Wafers (2 boxes to use in pudding layers and 1 box to crush over the top for garnish - Murrays brand are the best I find them at Walmart & Food Lion)
In a large bowl, mix the vanilla pudding according to the box instructions. Once the pudding is mixed together, add one tub of cool whip and the sour cream, mix well.
In a shallow pan pit a layer of vanilla wafers, a layer of bananas and a layer of pudding. Repeat that until all your pudding is all gone.
Take your 2nd cool whip and spread that on top of your last layer of pudding and crush one box of vanilla wafers and sprinkle over top as garnish.
Chill in the refrigerator for at least 30 minutes or until ready to serve!
