Yep, let the eating to beyond full season begin! But don't forget to set your scale back FIRST! You'll thank me January 2nd. Todays Way to Use it is a Cookie Challenge. I think that is a genius idea.
I don't do cookies, though. Only Biscotti's. Much simpler and less messy, gives me more time for playing with paper!
My recipe is from Cooking Light Magazine J/A 1999.
Coffee-Hazelnut Biscotti
2 TBL Frangelico (hazelnut liqueur)
2 TBL unsweetened extra dark cocoa
1 tsp instant espresso or 2 tsp instant coffee granules
1 tsp olive oil
2 large egg whites
1 large egg
1 1/3 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup granulated sugar
1/2 cup packed hard brown sugar
1/2 cup coarsely chopped toasted hazelnuts (divided)
1 tsp baking soda
1/8 salt
2 tsp ground coffee beans
Preheat oven to 300
Place liqueur in a small bowl. Microwave at HIGH for 10 seconds. Stir in cocoa and espresso until smooth. Add oil, egg whites, and egg, stirring with a whisk until blended.
Lightly spoon flours into dry measuring cups, level with a knife. Place flours, sugars, 2 TBL hazelnuts, baking soda, and salt in a food processor; process until hazel nuts are ground. Add ground coffee; pulse until blended. With processor on, slowly add liqueur mixture
through food chute; process until dough forms a ball. Add 6 TBL hazelnuts; plus 5 times or until blended (dough will be sticky). Turn dough out onto a floured surface. knead lightly 4 to 5 times. Divide dough into 3 equal portions, shaping each portion into a 10 inch long roll. Place rolls 3 inches apart on a large baking sheet (I use a Silpat mat) coated with cooking spray. Bake at 300 degrees for 28 minutes. Remove rolls from baking sheet and cool on wire rack for 10 minutes.
Cut each roll diagonally into 20 (1/2 inch) slices. Place slices, cut sides down on baking sheet. Bake second time for 20 minutes. Turn cookies over and back an additional 10 minutes (cookies will be slightly soft in the center, but will harden as they cool) Remove from the baking sheets; cool completely on wire racks. Yield:5 dozen.
It seems like a lot of work, but trust me, once you start making biscuits, you might not go back...unless it is for the molasses cookies!

Fun card, Susan. You found the perfect sentiment for the challenge and the tinsel antlers are delightfully quirky! The biscotti sounds wonderful, I'll have to give it a try. Thanks for bringing cookies to the Cookie Exchange.

Awesome image. I wish I did biscotti too, but I will leave that for people who can cook. I don't handle more than 3 ingredients. I love your sense of humor too. Hugs

Love the card and your sassy gal from the top her tinsel to the tips of her micro bead shoes - all the embellishments are just plain fun! I've always wanted to try my hand at making biscotti - and last year even downloaded several recipes - that's as far as I got LOL
