Poached Pears with Ginger Caramel Sauce
Ingredients Poached Pears
� 1 quart red wine or water
� 1/2 cup sugar
� 6 ripe pears, peeled, halved & cored
� 1 cinnamon stick, broken into pieces
� 4 whole cloves
Place everything (except pears) in large pan. Bring to boil and stir to dissolve the sugar. Add pear halves; lower heat to simmer and cook 10 minutes. Remove pears, cloves and cinnamon. Cook over low heat until liquid becomes thick and syrupy (about 15 minutes). Return pears to pan, cut side down. Cook 5 more minutes, constantly spooning syrup over pears. Remove from heat; set aside for one hour until cool.
Ingredients Ginger Caramel Sauce
� 1 can sweetened condensed milk
� 1 cup firmly packed brown sugar
� 1 cup light cream
� 4 inch piece fresh ginger, peeled, thinly sliced
� 1 tsp. vanilla extract
To make sauce, combine the condensed milk, brown sugar and cream in a medium saucepan. Use a whisk to stir over medium-low heat until the sugar dissolves. Increase heat to medium-high, bring to boil and cook for 3 minutes, stirring, until sauce coats the back of a wooden spoon. Pour into a bowl, stir in the ginger and vanilla. Let stand for 10 minutes to cool slightly.
To serve, use a slotted spoon to remove ginger pieces from sauce. Place pears in individual serving bowls with some of the cinnamon and poaching syrup; spoon the ginger caramel sauce over.
