I made quite a few of these for my students at the end of a LOOOOONG year. Throughout the year, they had become addicted to my butterscotch popcorn (I used it for bribes!) so I made them some each as a Christmas/Graduation gift.
I used the Treat Yourself gallery here quite heavily for inspiration so I've taken ideas from a few people. The problem is that it was a while ago, so I can't actually remember who it was. If I've totally stolen your original idea, I'm sorry.
I've used pop dots to lift up some of the bits of popcorn.
In a large saucepan or frying pan, heat oil until very hot. Add corn, place lid on pan, shake pan continually until popping ceases. Place popped corn in a large bowl. Combine honey, sugar and butter in a separate pan, stir over low heat until sugar dissolves, slowly bring to boil; boil for 5 minutes. Pour syrup over popped corn and mix till corn is well coated. Pour quickly on to well greased oven trays, place in the fridge to set.
