Default cricut how to vinyl question

I know I have seen it on here, but can't find it. WHat settings do you use for vinyl? To cut it out, but keep it in tact with the back till you want to use it.. know what I mean? I can't remember the settings, and I want to make my mom something, but can't remember how to keep the backing on untili its ready to hang.

I have another question about the Cricut and Vinyl---I have seen lots of great tiles and glass blocks made with vinyl and want to make one with a nativity scene. For example like these HERE. I can't find a similar image on a cricut cartridge so was wondering is there any other way to do something like this? I personally don't own a Cricut but my mom does and I was hoping to make it simple to go cut some vinyl at her place. Appreciate the help in advance.

Does anyone know how to cut polka-dots out using the Cricut Expression?
