Ink up your stamp with the lightest ink. Then take a second ink pad and ink over the light ink with the dark ink... then stamp!
I have not had any problems "contaminating" ink pads unless I accidentally start with the darker color first-- then it transfers to the lighter ink pad.
Here's what I did......I used small daubers and sponged the 3 inks onto the actual stamp, then stamped the image. If I needed more ink in one spot then I just grabbed a dauber!
On that card, it looks like they may have used the baby wipe technique. You drop re-inker colors on a folded baby wipe and use that as your ink pad. It is addictive to try.
Besides all the wonderful techniques already mentioned, you could use markers and color different sections of the image and either "huff" on it to moisten it a bit, or give it a quick spritz of water before stamping.
