photo paper has a "photo textured" back, whereas the glossy has "cardstock" backing... it makes a big difference when embossing (photo paper bubbles) or when adhering to the next layer.
I tried using photo paper yesterday because I was out of glossy stock. I stamped first in stazon black, which worked fine, but then tried to color it with blender and stamp pad and even after it dried I would rub it all off with a tissue.
I experimented with photo paper when I was doing marker batik. The ink doesn't flow as well on the photo paper and it seemed stickier...I'd lift up my stamp and the paper would come too. Couldn't do any techniques that involved heat and it's much flimsier. My vote is for SU glossy as well.
I've never tried the photo paper, first of all because I heard it didn't work as well and second, it costs a LOT more than SU glossy! It's definitely worth it to buy the SU glossy paper!

The only time I tried photo paper was doing the polished stone technique -- the alcohol totally removed the paper coating...was very messy and end result was unusable (at least by my standards, I'm sure there are people out there who could have made beautiful art with it ). So, I've never tried it for anything else, but for straight stamping, it would probably work...if you have loads (like all my scraps from printing my own picts), then it is worth a try.
I was so excited to try the wax paper resist technique, but didn't have any SU! glossy, but I did have some photo paper. I was so disappointed with the results - not very smooth, some were usable, most were not. I really wanted to use my gold and silver but they did nothing but smear. Now, I don't know about the SU! glossy with the gold/silver (haven't tried yet) but, I will also stick with SU! Plus, the photo paper I had had the photo company logos on the back, necessitating an inside the card layer.
