Is there anywhere I can find the directions to make the Post-it note holders?

Gallery at Splitcoaststampers
Here is a link to Michelle Wooderson's gallery where she has directions and a photo of what looks similar to the one you showed.
You can do a search for post-it notes in the gallery and it should bring up all sorts of choices for you. Many people also post directions too. Good Luck
