If you are interested in paper piecing (using patterned paper for part of a stamped image) I have two suggestions to make it a little easier. You are right that it is hard to cut out the pieces exactly -- I have found it to be easier when I emboss the image, as opposed to just stamping it with ink. That way I can get really close to the lines, but the raised embossing powder serves as a guide. Also make sure you have really good, smallish, sharp scissors that will cut all the way through their tip easily. Stampin'Up's paper snips or those bumblbee looking scissors (by fiskars, maybe?) work a whole lot better than larger scissors with thicker blades.
