Default Newbie - Nettie Baker *Waving Hello!*

Hi to you all! I love paper crafts and have enjoyed them for a long time. I am a single mom with an adult son and also, I am the "mom" to a cockapoo, named Quebeley. I have been looking for ideas today. I am in the process of moving to Virginia and when I get there, I want to have an open house. I have not packed my stampin' stuff! I have put up all my quilting stuff, and can't play with that. I do have a blog where I post antique images or vintage images from postcards that I collect. I love incorporating those into my fabric and my paper projects. Right now, I am thinking of tea bag covers, cup cake wrappers and cards for the open house. If you have any ideas, share them with me, and if you have a rockin' chocolate cake recipe, I could use one! LOL!!!

waving back...and i have a mayo cake recipe and a cola cake recipe...both are delish

Hi Understandblue. I love chocolate cake and think that will be okay for the housewarming. I want to make cupcakes. My son is in a good position and that is what is taking us back to Virginia. Why fly cross-country and have to go through all that travel if your work is back there? So, duh...it's a no-brainer. He just got promoted to Director of Programming for his company, and there is just a ton of stuff to do, so paying for flight tickets is out. Anyway, that being said, we will have them all over to the housewarming and I know it will turn into a good night, and a fun one. I just need a tried and true recipe. I normally use Betty Crocker and put the pudding mix in it, ya know? This time, I would like to try somethiing more rich and decadent. Got a recipe that fits the bill? I am all ears!

I grew up in San Diego when it used to be a small town, lol, so that means a long time ago! I loved being able to go to the beach and look for the small sea shells in the sand. I always believed that if I dug deep enough, I could find a big shell to take to school and show everyone. Never happened, LOL!! I lived there when Fashion Valley did not exist and Mission Valley was a dairy farm! I'm a 50's kid. Gosh, it was great and not crowded back then! I'm waving back at ya'!

Thank you for your kind comment! Yes, I feel very lucky to live in such a beautiful clean country. I hope you are able to visit some day. You can do mountains, snow, glaciers, and beaches all in the same day!

ok this is an old Southern recipe...very long post(s)...also DO NOT try to count calories...this is a "free" food as far as i'm concerned...one slice and i'm free!

Coca-Cola Cake

1 cup Coca-Cola
1/2 cup buttermilk
1/2 lb unsalted butter, softened
1 3/4 cups sugar
2 eggs
2 tsp vanilla
2 cups flour
1/4 cup unsweetened cocoa
1 tsp baking powder

Get the oven going at 350 degrees. Lightly grease a 13x9" baking dish.
Combine the cola and buttermilk. Set off to the side.
Using a mixer, beat the butter til nice and fluffy (or it begs for mercy).
Add the sugar and beat til blended. Add eggs one at a time, again beating well.
Fold in the vanilla. In another bowl, combine the dry ingredients except for marshmallows, alternately adding flour mixture and cola mixture to the batter. Begin and end with flour mixture, blend til smooth. Fold in marshmallows.
Bake 30-35 minutes. Cool 10 minutes in the pan on wire rack. Pour Cola Frosting over warm cake. Let cool completely before serving.

Coca-Cola Frosting

1/4 lb unsalted butter, softened
1/3 cup Coca-Cola
3 Tbs unsweetened cocoa
1 (16 oz) pkg confectioner's sugar
1 Tbs vanilla

In a large saucepan over medium heat, combine butter, cola and cocoa. Whisk til the buttah completely melts and the mixture is smooth. Remove from heat and whisk in the confectioner's sugar and vanilla. Stir til smooth.
