I just bought some of these with the intention of stamping on them but would like to change the colour of them first. If I use arcrylic paints can I then stamp on top of this or should I look into using something else?

If these are the grey (made of chipboard) ones that I've seen online, then I would think, 'Yes'. But, I would try it out on just one piece to make sure it works.
You might also try stamping DTP (Direct To Paper). Take an inkpad and just smoosh it down on the chip several times until the color is as strong as you like.

The only way that I have used them so far is to make a tag by covering them with paper, stamp on that, punch a hole, and attach ribbon, I then put it on a card.
Here are a few things that I have heard you can do with them. One day I will find time to try some of these ideas.
Painted with acrylic paint and then stamped on top of that
Use chalk ink for the DTP method
Make pins with them by decorating as you choose, then spray with a glossy spray, glue pin to back.

I have used them with the chaulk pads. We did the "smooshing into the pad" thing, then let it dry (VERY important, cause the chipboard likes to absorb and hold that wetness), then we just stamped right on it. We made the cutest magnets!!! Not sure how the regular dye inks would work, but the chaulk looked great!!

I have painted the chipboard --let it dry completely--then have stenciled letters on them and colored them in with the stampin up markers.
