I am an old hand at hauling pottery to craft fairs -- not paper crafts. But my advice would be essentially the same. The number of items needed depends very much on the circumstances of each fair.
Location -- small church or the state fair?
Other vendors -- others with similar crafts or will yours be unique?
Judging -- if you had to pass a review board the customers will be more likely to buy.
Time -- one day or two or three?

It would be very wise and well worth your time to talk to some of the sponsors of the craft fair and to some of the previous vendors. They would be able to give you specific information regarding sales volume in the past years.

My opinion (and I haven't even been to a craft show in years, but just hearing family and friends talk) is to do something on the cheaper side. You would be more likely to sell it and more of it. I am thinking maybe things until $10.00? But like I said it has been years for me.

A good rule of thumb that I've heard is to bring twice as much (retail value) as you want to make (income.) So if you want to make $200 make $400 worth of stuff.
I'd say no more than 5 of any type of thing (except single cards). Keep it cheap and keep it simple. Fill your table with nice displays.

Your question was how many cards to bring, not how to price them, right? If that is your question, then for a 1-day show I usually bring in at least 75 cards; for a 2-day show, I usually bring in about 125-150. I price my cards at about $3-$4 depending on the amount of embellishments and the overall difficulty of the card. I also make sure to take a couple sets of sentiment stamps and a couple of colors of stamp pads (including black) in case someone wants me to personalize a card that is blank inside that's just decorated on the outside with a "happy birthday" or "thinking of you" or something like that stamped on the front. Hope this helps.
