Default Recipe help (long)

We were out of town last week and ate at a Pizzeria Uno Chicago Grill (we don't have one of these in our town). My 17 year old son fell in *love* with their broccoli cheddar soup. He had never eaten this kind of soup before but ordered it as an appetizer to try it. He liked it sooo much that he later asked for a box for the rest of his unfinished entree and ordered a second bowl of soup (which he also finished!) He can't stop talking about this soup.

I have not been able to track down this restaurant's recipe. I wondered if any of you have a tried and true recipe for broccoli cheddar soup that you would be willing to share. I'm coming to you guys because there are so many recipes online, and they vary tremendously. I would rather get a recipe that someone could endorse from experience. Thanks! . . . sorry so long!

Here is one of my favorite Broccoli Cheddar Soup recipes:

Taste of Wisconsin Three Cheese Broccoli Soup
Copykat Recipe

Makes 8 Servings


6 Tbsp. butter
1/3 C. flour
1/4 tsp. garlic powder
1/4 tsp. ground nutmeg
1/8 tsp. ground white pepper
dash ground thyme
1 - 13 3/4 ounce can chicken broth
1 C. milk
3 C. bite-size broccoli florets
1 C. whipping cream
1/4 tsp. Worcestershire sauce
1/8 tsp. hot pepper sauce
1 C. (4 ounces) shredded Wisconsin Cheddar Cheese
1/2 C. (2 ounces) shredded Wisconsin-Style Havarti Cheese
1/2 C. (2 ounces) shredded Wisconsin Swiss Cheese



Melt butter in 3-quart saucepan over low heat. Blend in flour and seasonings. Gradually add broth and milk; cook, stirring constantly, until thickened. Stir in broccoli; simmer 10 minutes. Remove from heat; stir in cream, Worcestershire sauce and hot pepper sauce. Add cheeses; stir until melted. Makes 6 - 3/4 cup servings.

Let me know how it turns out!!

I just noticed I put "makes 8 servings" at the top and the recipe notes say it makes 6 servings... I meant to type I make it into 4 servings. I don't know why I put 8, lol. Sorry!!

Hi Cathy-

Funny I just went to Uno's last night and ordered it myself, although it was 100 degrees outside, inside it was freezing.

I used to know the COO of Unos, it is a bag already made that the soup comes in, I would love to know the recipe myself, it is delicious!!

I am going to try this recipe too though, I do love, love broccoli and cheese soup!

Ooooohhh... I can't wait to try this recipe. My favorite food place is Chili's and I LOVE their broccoli Cheese soup. I especially like it because they add a small scoop of Pico De Gallo in the middle. mmmmm....
