We did this on our wedding invitations - My solution was to let DH do it because he had more patience with it.
In all seriousness, I have been told that wrapping a magazine with aluminum foil and using clip board help with embossing. The aluminum foil will help the paper heat evenly. I haven't tried it yet myself.
The best results I have had have been clipping the vellum to a clipboard that has a magazine on it with aluminum foil wrapped around it. I have found that it works best for all my embossing (vellum or cardstock). Also, make sure you keep the heat gun moving constantly.
I have had the best luck by using a clothes pin to hold the vellum and heat from the underside. Also a clipboard covered with foil to lay the vellum on helps - right side up on that one! Joni

The foil definitely works! Also move the heat gun around a lot because it makes the heat spread out across the foil. The even heat will help the vellum stay flat.
