I took a long break from stamping and getting back into it, starting with Marie Kondo-ing thru my stash and organizing the rest. Pretty excited about unmounting all my wood block stamps and using EZ Mount instead. I‘m keeping the original foam so I just bought the thin mount. I’ve been reading some things about stamping the image onto the cling side first so you can see what each stamp is, but does the ink interfere with the cling ability? Particularly with a stamp that is a solid/opaque image?

I've done that with a few of mine with no issues to date.
I don't find that it interferes with the adhesion. I do find, however, that the ink sometimes transfers to the backing that I'm using to store the stamps. It's not a big issue for me, but I wanted to mention it in case it is a problem for you.
I have stamps (mostly small sentiments) that are too thick for accurate stamping on just the 1/8" foam. They tend to "roll" over and slip. I'm getting the thin foam and removing the thick so that they don't "jiggle" when I stamp. The problem will be magnified with both pieces of foam on the back of the rubber.
Also consider if you are putting 1/16" (thin) foam on top of the 1/8" foam that comes on the rubber, is that you will not be able to use those stamps in a stamp positioner tool (like a MISTI or Tim Holtz or Stampin' Up types) if you get one in the future. They will be too thick.
I too plan to remove stamps from wood and I plan to maintain the foam already on them. But I can’t figure out whether to get the 1/16 in or the 1/8 ez foam. I have found that some people use either on their cushioned stamps. Ez foam is too expensive to experiment with. What has been your experience?

According to my Amazon purchase, I am using the 1/16 which I believe is the suggested one if you’re keeping the original foam.
It is a black or gray foam sheet with sticky on one side (to hold the unmounted rubber stamp) and plastic on the other (so you can use the stamp with an acrylic block).

I like the 1/8 if I have removed all the original foam. It is true single line sentiments can wiggle, but I find that on wood they can roll too. You just have to be focused on a very up/down motion imho.
I find if I hit it in the micro for 3-5 seconds it will come off. I use these to scrape them carefully (but depending on your micro could be less/hot be careful):
I don't know that source but for 2 bucks it is not a big risk. I got introduced to these back in the bookstore to take labels off books for customers with goo gone and this. I love them. Goo gone is also a choice to get off bits of foam. Spray and let stand for a few minutes.
EZ mount + StazOn ink - any issues?
