Default White Bean Brushetta


1/2 red onion, thinly sliced
1 tbsp lemon juice
3 tbsp olive oil
1 garlic clove
1 tbsp rosemary, chopped
1 (15 oz) can cannelini beans
2 tbs flat leaf parsley, chopped
salt and pepper to taste
1 baguette, sliced


1: In small bowl, mix onion and lemon juice and let sit

2: In medium skillet, heat olive oil over medium heat. Grate garlic into pan, add rosemary and stir 1 min. Add beans and cook till warm (about 5 min). Add in parsley, salt and pepper.

3: To serve: Place 1 spoonful of bean mixture on bread slice and top with onions.
