Can any of you copic color experts suggest a good color to use for coloring/shading peaches and also beets??

This is a great reference book for Copic coloring of nature-related images:
Copic Coloring Guide Level 2:Nature by Colleen Schaan and Marianne Walker. Published by Annie's Attic. There are a variety of fruits illustrated with color recommendations.

YR61, 65, 68 is a good peachy colour family if you're wanting to stay with one tone. i would add touches of red with an orangey red family like R11, 12, 14, 17...
