Almost there Jaclyn! Wow!

My meals aren't too exciting as we are on a healthy eating plan around here. Tonight was grilled chicken, asparagus, and the leftover goat cheese grits from last night. Those were so yummy! I'm a grit lover and hadn't had them in a long time.

For those interested: It is 99 calories per 1/2 cup serving if you make it this way:

4 cups water
1 cup quick cooking grits
3/4 tsp salt
chopped parsley and basil
4 oz goat cheese

Boil water, add grits and salt slowly, lower heat to low and cook for 5 mins then add herbs and cheese. I added a little greek yogurt for creaminess.
