I did have a peek at the video (at least I assume it was this one since the mixed media description fits) and it's not that they're being used
as mists, they're being used
with mists (she's using the Smooch spritzes). The acrylic ink is called Izink and looks pretty gloopy to me, as you might expect from a pigment ink, I guess, and is in a bottle with a dropper mechanism.
Thinking about your question though, there would be differences between an acrylic and watercolour mist - if it's acrylic-based it will be water resistant once dry so you should be able to spritz or splatter with an acrylic mist and leave it to dry then add a water-based medium on top and the acrylic drops should resist and keep their colour. I guess it's academic though as the Izink under discussion is not a mist (maybe you could mix it in a mister bottle to make one though?).
There are several other vids on YouTube that feature Izink - quite a few in French which makes me wonder if it's a product Clearsnap have picked up for distribution (the French videos seem to be older ones)
