Default Embossing Nestabilities in Big Shot? The sandwich, please?

I have a Big Shot. I have been using my Nesties for cutting, and now I want to emboss (actually even when I cut they emboss slightly, what's up with that?).

I have looked on YouTube and there are as many different sandwiches shown as there are videos, practically.

I have a set of embossing mats. They are from PTI. Do I use those or do I need the Spellbinders mats or do I need the Sizzix silicone rubber mat?

One woman uses some kind of black Sizzix plate in her sandwich, with one silicone mat.

One woman uses just the two acrylic plates, the mats and a bunch of shims.

What is the correct sandwich, please?
