Here is a very easy recipe (and I mean EASY) that tastes so good. It is like a hash recipe but I don't care for hash but love this. Give it a try.



1 1/2 - 2 lbs beef stew meat

1 (20 oz) bag diced or has brown potatoes (I used diced with onions & even added an extra bag of hashbrowns to stretch the recipe - worked great - brand was "Simply Potatoes")

1 onion (I omoitted since my potatoes had onions)

1 cup beef broth

1/4 cup butter, melted

Salt & pepper, to taste

Stir together & cook on low until meat is cooked to your liking. (The recipe says 6-8 hours, but it is too long for my pot...it was perfect in 5 hours).

I love using my crockpot expecially when I've had a rough day and dinner is ready! I have TONS of recipes for weight watchers on a CD at home. It's over 100 pages long with about 300 recipes. I will include it in another reply as an attachment when I get home tonight.

I don't know why, but I too, use my crockpot more in the cooler months. I have also been using it more in the summer to help keep the house cool, makes sense!

I didn't look at the document yet,so it may be in there...but you mentioned joining Weight Watchers...I have a recipe for 1 point turkey chilli...I'll try to find it and post it. It's not super thick chili (I'd say it's more like a soup) but it's yummy, and for 1 point per cup? it's AWESOME!

oooh I want this recipe. I'm needing to find more low-point recipes because by the end of the day I hardly have any points left!

Creamy Chicken and Wild Rice (7 Points)

1 pkg. (8.25 oz.) skillet-dinner mix for mushroom and wild rice

That chicken, cranberry sauce thing can be made with lipton onion soup mix instead of the barbq sauce and it is quite good too.

Thanks for the WW recipes - had lost 22 pounds and then got off track and this could help me get back on - easy and fairly inexpensive ingredients in most of the recipes. Thank you a bunch

Yeah that sounds like ricea roni or hamburger helper type thing...surprised it fits WW

i make the chicken cranberry , lipton onion soup, and french dressing. I have never tried it in the cp but i guess it would be fine (I use whole cranberry dressing) the recipe is 1 pack soup mix, 1 bottle french dressing, and 1 can cranberries

I made the cranberry bbq chicken again and had leftover chicken and sauce. I shredded the chicken. I spread the leftover sauce over a whole wheat Boboli crust and then sprinkled the shredded chicken and shredded colby jack cheese. Baked it according to the crust instructions. Yummy! Like bbq chicken pizza.

The BBQ chicken is also great on small french rolls with some provolone cheese on melted on top!!

I'm glad I saw this recipe thread....(I had gotten the bbq chicken one many months ago from another thread....it's a FAV around here!!)

I will try to find my recipe for lasagna (don't think I spelled that correctly) in the crockpot...it works great!!

Loving this thread!! I am really trying to utilize my crockpot more ...as it is such a time saver!!! Keep 'em coming ladies!! I will share the beef stroganoff we are making tomorrow after we taste test it for you! We found it online and we are trying it tomorrow

Default Slow Cooker Lasagna

Here is the slow cooker lasagna. I have used the recipe on the back of the noodle box and my own version with spinich which works well too.

*1 pound ground beef (have also used the Morningstar Farm veggie crumbles)
*1 large onion
*2 garlic cloves, minced
*1 can (29 ounces) tomato sauce
*1 cup water
*1 can (6 ounces) tomato paste
*1 teaspoon salt
*1 teaspoon dred oregano
*1 package (8 ounces) no-cook lasagna noodles
*4 cups (16 ounces) shredded mozzarella cheese
*1 1/2 cups (12 ounces) small curd cottage cheese
*1/2 cup grated parmesan cheese

Directions: In a skillet, cook beef, onion and garlic over medium heat until the meat is no longer pink; drain. Add the tomato sauce, water, tomato paste, salt and oregano; mix well. Spread a fourth of the meat sauce in an ungreased 5-qt slow cooker. Arrange a third of the noodles over the sauce (break noodles if necessary (I even overlap) Combine the cheeses; spoon a third of the mixture over the noodles. Repeat layers twice. Top with remaining meat sauce. Cover and cook on low for 4-5 hours or until noodles are tender. Yield: 6-8 servings

I just had to add that today (my b-day) my DH and son's gave me an All Clad 7-qt slow cooker with an cast iron insert that can be used on the stovetop for the browning stages of recipes....my slow cooker truely just became a ONE pot deal!!! I'm sooo excited!

Crockpot Italian Sausauge, Peppers and Onions

Sweet or hot Italian sausage -- your choice -- gives this slow-cooked stew its rich flavors. Oh, that and the tomatoes, peppers onions and red wine. Mmmm.

Estimated Times:
Preparation Time: 20 mins
Cook Time: 180 mins

Servings: 8


Ingredients


2 green peppers seeded and chopped in 2-inch squares
1 red pepper seeded and chopped in 2-inch squares
1 1/2 large yellow onions cut in half, then in 1/2-inch slices
1 can (6-oz.) tomato paste
1/2 cup chianti or dry red wine
4 whole bay leaves
2 tablespoons whole fresh basil leaves
4 cloves garlic chopped
2 tablespoons chopped fresh parsley
1 tablespoon crushed dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can (28-oz.) peeled tomatoes chopped, juice reserved
2 1/2 pounds sweet or hot Italian sausage cut in half and browned


Directions


Check your crockpot for specific operating instructions and cook accordingly.

Layer half the onion on bottom of crockpot, then half the peppers.
Then layer the sausage, then the rest of the onions and peppers.

Place garlic, whole bay leaves and whole basil on top.

Place tomatoes on top; mix drained tomato juice, tomato paste, and wine. Pour over all.

Cover crockpot and set on LOW for 6 hours or HIGH for 3 hours.

At the beginning of the last cooking hour; mix parsley, oregano, salt and pepper in a small bowl and add to crockpot. Cover and continue cooking one more hour or until sausage is cooked and peppers are tender.

Crockpot Italian Pot Roast

A nice dinner to come home and have waiting for you.

Estimated Times:
Preparation Time: 10 mins
Cook Time: 255 mins

Servings: 4


Ingredients


1 pound (3-5) beef roast
1 packet Au Jus Seasoning
1 packet dry italian dressing
1 can (12-oz.) tomato juice
1 package small baby carrots
3 medium potatoes peeled, cubed


Directions


Place the meat in the crock pot. Place carrots and potatoes in with the roast. Sprinkle seasoning packets in a mixing bowl with the tomato juice and mix. Don't worry if there are lumps, they will work out during cooking. Pour the mix over the roast and veggies.

Put on low for 8 1/2 hours or high for 4 1/2 hours.

Default Crock Pot Bean Soup

I love to make this soup when it gets colder out. It's so easy too.

1 - 48oz jar of Great Northern Beans (I use Randalls brand)
1/2 a medium onion - chopped
1 carrot chopped
2 ribs of celery chopped
1 ham shank or diced ham (optional)
2 soup-size cans of chicken broth (I prefer low sodium)
1 bay leaf

Directions:
1. Chop your onion, carrot and celery, put them in the crock pot.
2. Place the ham shank (or diced ham) in the pot.
3. Pour the entire container of beans over top - juice and all.
4. Pour the chicken broth in until the broth covers the beans by about a 1/2".
5. Toss in the bay leaf.
6. Turn on the crock pot and go.

Everything in the pot just needs time to warm up and flavors to blend. The soup is ready to go when you are. I've eaten it in as little time as 3 hours, but it's also been great after 10. The house smells incredible.

When I cook with a ham shank, I pull it out just before I'm ready to eat and pull the meat off the bone and put the meat back in the pot to eat in the soup.

Season as you wish.

I have to aplogize to many of you. I read the recipe for pot roast with french onion soup mix and coke and thought you all were wacky!
I was wrong. when so many raved, i tried it and it was FANTASTIC! I only wish I had made mashed potatoes to soak up all the juice.

Cherry Pork Chops in the Crock Pot

I have so enjoyed these recipes -- I thought I would share one --when my daughter was younger -- she was very finicky about what she would eat. I found this recipe and she loved it.

6 boneless pork chops, cut 3/4" thick
salt
pepper
1/2 of a 21 oz can cherry pie filling
2 tsp lemon juice
1/2 tsp instant chicken bouillon granules
1/8 tsp mace

Trim excess fat from pork chops. In a large skillet brown the pork chops. Sprinkle each chop with salt and papper.
In the crock pot stir together the cherry pie filling, lemon juice, chicken bouillon granules and ground mace; mix well. Place the browned pork chops atop the cherry mixture. Cover and cook on low setting for 4 to 5 hours.
Serve with sauce poured over the chops.

I used to also serve the remaining half of cherry pie filling can cold -- which my daughter actually preferred. I liked the hot -- she liked the cold sauce.

Here is my all time favorite crock pot recipe:

Beef Dip

1 can of beer
1 can of beef consomme
1 pkg Au Jus seasoning
1 pkg Hidden Valley Ranch salad dressing

Mix the above contents in your crock pot add to it one beef roast ( any type will do but I prefer the leaner cuts) . Cook on high all day. Take out the roast and shred it with two forks. Serve on crusty buns with the jus as dip. Mmmmm good.



I have also had pork tenderloin done in the crock pot with BBQ sauce of your choice, onions sliced very thin and minced garlic added to the sauce. Again just shred the meat with two forks and serve on buns.

Slow-Cooker Orange Chicken

8 servings, one thigh each1/2 cup KRAFT Original Barbecue Sauce 1/4 cup flour 1/4 cup orange juice 1/4 cup orange marmalade 3 Tbsp. soy sauce 1 tsp. grated gingerroot 8 bone-in chicken thighs (3-1/2 lb.), skin removed STIR barbecue sauce and flour in small bowl with wire whisk until well blended. Add all remaining ingredients except chicken; mix well.

POUR sauce mixture evenly over chicken in slow cooker. (Do not stir.) Cover with lid.

COOK on LOW for 3 to 5 hours. Serve chicken topped with the sauce.

I just got a crockpot for Christmas, but I have not used it yet. I really appreciate all of the recipes that have been posted. I noticed that some recipes say that you have to cook the meat a bit before you put it into the crockpot. Other recipes just say put the meat in with no mention of that. Is there a standard rule about this? Does the meat have to be defrosted? Thank you for your replies.

I would definitely defrost the meat. I have put meat in a raw and cooked. For example if I'm doing chili I like to cook up the hamburger first. I just think it looks and tastes better that way. For a roast I have just put it in raw although I usually brush it with some kind of browning sauce so that it looks less pink when done.

Well, I don't see a hamburger chili recipe in the mix so here is mine:


1 - 2 lb lean ground beef
1 cup chopped onion
1 bell pepper chopped (green, orange, yellow)
14 oz. can of kidney beans with liquid or brown beans
10 oz. can sliced mushrooms (optional)
2 - 10 oz. cans condensed tomato soup
1 tsp. chili powder (or to taste -- I use a lot)
1/4 tsp. seasoning salt (I use many other spices instead -- dill, italian seasoning, curcuma, garlic etc.)
1 tsp. granulated sugar or cinamon (optional)
1/2 tsp. salt (or less, or none)
1/8 tsp. pepper
1/4 - 1/2 cup of water

scramble-fry ground beef prior to placing in crock pot

put all ingredients in crock pot and stir well
cook on low for 6-7 hours or high for 3 to 3 1/2 hours

~~ everything is all cooked so I don't really get the times
~~ you can leave it in for a shorter time with no problem except that maybe the flavors will not be blended very well.

I think it depends on how long you want to cook something too. Sometimes when we cook a roast in our crockpot, we will rub pepper onto it, brown it, and then put it in the crockpot. Doing that helps seal in the moisture and also gives it a bit of flavoring. Other times I will just stick it in frozen and cook it for 6 hours. When I do my taco soup though, I will cook and brown the meat first before adding it.

I have an easy one for HAM & Navy Bean soup:

  • saute 1 chopped onion and 1 clove of garlic in a tablespoon of EVOO (extra virgin Olive Oil)
  • add 1 cup or 2 cups of diced ham
  • add 1 qt of chicken broth
  • add 1 undrained can of Navy Beans
  • salt & pepper to taste
  • simmer for about an hour, enjoy!
YUMMY!!!

this isn't anything new and exciting, but I made a whole chicken in the crock pot yesterday for the first time, and all I can say is WOW~ I found online somewhere...season the inside and outside of the chicken...chop an onion, put it in tht bottom of the CP, put the chicken on top...that's it. No liquid, the chicken makes it's own...can we say JUICY?!?!?! When I went to take the chicken out of the crockpot, the wings FELL OFF. mmmmmmmm. I can't believe I never did that before...

My all time favorite is: put in 1 round steak (cut into portion size pieces); cover with one or two cans of cream of mushroom soup. Let cook all day! Yummy and tender. Gravy is great over mashed potatoes! Even none mushroom people love it and want seconds on gravy!
