Wanna know what I just spent the last hour and a half doing???
Cleaning up smooshed marshmallow out of the carpet ALL OVER THE HOUSE. I gave the boys marshmallows in little bowls (the little ones - my mom sent them for easter) to have while I showered and they watched a movie. I come out to discover that Adam has dumped them all out and has stepped in them and apparently some were warm?!? and now there is marshmallow paste all over the house every where he walked.
I spent an hour scrubbing it out of the carpet on my hands an knees. Now I vaccumed. Next I am steam vac'ing it. I'll be at this for a while longer.

Here ya go! We aren't having it since today sucked. We'll have it later this week. I usually triple or quadruple this recipe because the leftovers are just as good and my dad always wants some for lunch at work too.
Eggplant Parmesean
1 sm eggplant
(2 eggs, 2 T water, salt, pepper, oregano, 1/4c flour, 1/3 c parm. cheese)
mozz cheese
spaghetti sauce
1. wash and peel eggplant. Cut into 1/2 in slices. Mix middle ingredients together to form a runny pancake batter. Dip eggplant slices into batter. Then cook in hot oil. (4-6 min)
2. In large baking dish, pour thin layer of sauce. Place eggplant on sauce, sprinkle with sauce, parm and mozz cheese. Repeat until all eggplant is layered.
