You can use them under your top layer as borders instead of using a solid piece of card stock. Just glue to the back on all four sides. Happy Stampin'

Throw a sheet or plastic tablecloth over your entire area.
A quick way to keep dust and sunlight off your stuff.

I use the retired cardstock as it matches the retired DSP. Also, many of the retired colors "coordinate" with new DSP. So, yes, I use all my retired papers.
