My absolute favorite is the Year of Flowers series from Papertrey Ink. A company I found recently is Art Impressions: I love their Girlfriends series and the Shake Your Booty series.

Butcher paper! Especially if you teach a lot of classes. $20 at Sam's; I think it's 24" wide and 1000 feet long - you'd get a lot of mileage out of the roll.
