I did a similar Eiffel tower using the gel medium transfer method you mentioned. Yours is much prettier than mine. :)

I also printed out the Eiffel tower on regular copy paper using my inkjet...

They cut the bound edge off, then punch the holes & insert the coil. I didn't have to do anything other than hand the person the book & choose which type of coil I wanted.
