Stampin' Up sells guides for the blocks. They are a vinyl cling sheet you put on the acrylic block and if you press the clear mount stamp onto the guide, it sticks better.

Rubber cement would be my choice, for the red rubber stamps. But I'm not sure what I'd use for the clear polymer stamps.
You can get Rubber Cement at office supply stores.

Sizzix makes a "Square Flip-its Card" die. It's a swing (flip-flop) card. The centre panel is about 3 1/4 X 3 1/2". I realize it's smaller than you want, but it would be so much easier to cut it...

I get a good laugh when people type 'cleaver' instead of 'clever'. I love saying "I'm so cleaver!". (snort) Makes me feel like I should go hack up some meat or something.

I'm just guessing here, but it looks like they stamped the image in a grey colour and then watercoloured over it. They may have used gauche paint which is kinda like watercolour but has more opaque...

It could be that your plates are more worn in the middle, so when you use smaller dies, they are placed where the plates may be thinner.
