Not really what you are looking for, but I recently made them by boiling them (fresh brats) in Octoberfest beer and then grilling them. They were delicious. The beer really added a great flavor.

My guess is that the problem came from sugar crystallization. When making fudge with granulated sugar, you have to be very, very careful to make sure that every single granule of sugar has dissolved....
