I'm looking for a from-scratch sweet potato casserole recipe... the potatoes are taking up waaaay too much room in my fridge. Also gonna have to make the marshmallows from scratch, and that is going to be interesting...
I've never cooked with sweet potatoes, and I've certainly never made marshmallows from scratch. I'd say you're gonna have your hands full just making that casserole.
Try Foodtv.com for some recipes. I'd assume you could bake or boil the taters and then mash em and add the "stuff" that goes in the casserole. I don't have a clue what goes in marshmallows except sugar and maybe corn syrup??

I'm extremely thankful that my mama taught me to cook from scratch, because nearly everything in our Thanksgiving dinner requires that... we don't have very many convenient box mixes or instant anythings.
I had to find a marshmallow recipe that didn't call for corn syrup, because we couldn't find any here... specialty items like that are hit-or-miss and sometimes expensive, but when we find them there's temptation to buy out all the stock, because they don't often reorder... :P DH did find cranberry sauce though, so I'm thankful for that. Usually I buy it up in the summer just in case. Not too many Americans in town any more, so there's not the demand there once was.
I have the sweet potatoes boiling in their jackets - I hope that will work, and they'll slip off easily. I didn't feel like peeling them all first...
Marshmallows from scratch are a real treat! I'm not at home but this is very close to my sweet potato casserole recipe. I see you've been busy while I've been away, but now it's safe to draw my name!

I'm not crazy about them in a casserole but last time I made one I mashed them, probably with milk and butter, then threw in some bourbon and put pecan halves on top. It was good but I prefer to make them baked. I leave some plain and them put a combo of butter, flour, brown sugar (llike a coffee cake topping) and mini marshmallows in a couple and put them back in the oven for a couple minutes. now those were really yummy.

I can't wait to hear about your homemade marshmallows! We have a company here that makes handmade gourmet ones - the orange vanilla ones are my fave - they are like a fluffy dreamsicle!
OK, I'm off again....just when you want a swim meet to last longer it gets done! I left DD to watch some friends swim and snuck off for a coffee to try to deal with the leftovers of my migraine....must be something in the air today. I'll see ya in about an hour!

OMG, Dreamsicles were my absolute favorite summer treat when I was a kid!

I wanted to take time out from my busy cooking and baking to wish each and everyone of you a very Happy Thanksgiving~hugs to all~The weather has been great here so I have been taking the dog for really long walks and enjoying all the sun I can while it lasts.
