I use all kinds of paper for my base. I've used the inexpensive paper from all of the big craft stores, as well as patterned papers. It all depends on the look I'm going for. The only paper I ever had a problem with regarding size was paper that I bought from a scrapbook store that was manufactured by that store. It was 11 3/4 x 11 3/4", and it drove me crazy.
I use paper from all over. I use a mix of SU and CTMH (for the demo companies, though I use much more CTMH than SU in 12x12), paper from the big box stores, and paper from the smaller scrapbook stores. I rarely use white as a base that shows as that reminds me of the old CM days and the super cheesy style of using cookie cutters to cut your pictures into shapes (yes, I did it!). I've also used the sheets that come inserted in top-loading albums if I need a white base to back whatever I'm doing.

I'm only a little bit of help since I prefer Kraft lately, but Bazzil is a nice weight for your average scrapbook page. So is DCWV, but I don't think they sell just white, only variety packs.
