I would probably keep my earth elements since that is more my style. The set though hmm that is sooo hard! I would have to say the headline alphabet but that would leave out all the other fun stuff. That is just my practicle side speaking. You didn't tell us your answer to this hard question.
I would keep the Earth Elements Set (I love Browns) and it plays to my "nature side" and the set would probably be Botanicals - that way I can make masculine/feminine, sympathy/thank you/thinking of you (only ink up someone special and you've got a baby card) or birthdays - - - it is very versatile. Although, I will NEVER go down to just one set - that's for sure.

Petal Prints for the set because you can do so much with it - it's like getting several stamp sets in one. Colors would be Earth Elements because that's my favorite family and I use those colors constantly.
Ooooo - forgot about Botanicals. I picked a currently available set, but if I chose a retired set, I'd have to pick Botanicals, too. Still love that set and use it tons on my personal stuff.
I think I would have Best of Cluck and Bold Brights ... I love the bright colours and I cant say enough about the chickens, love them! I could never just have one set though, that would be awful!
Yeah - if I had to pick a current set I would probably pick Heartfelt Thanks - just because I love the double stamping. I would probably keep Earth Elements though - although I like the Regals with this set.
Or maybe Lovely As A Tree (since I like masculine Cards) then for sure Earth Elements.
It is such a good thing we don't have to make choices like these (practically Sofie's Choice > well maybe not to that extent, but you know what I mean)

Though there are so many nice sets, if I truly could only keep one, I'd keep Sketch an Event. As I've told so many people, with this one set you can make a card for any life event that occurs, and there are stamps suitable for both male and female, young and old. It is so versatile and I find myself grabbing a stamp from it so often for different things -- baby, graduation, wedding, birthdays, Christmas, I even use the leaf one for funerals, etc. You truly can cover any event with this one set!!! Though there are certainly more "fun" sets out there, this would have to be my choice!
Oh, and I guess Earth Elements, and the neutrals in general, would be my color choices.
Edited to add WHY, as per the OP's original request:
I love flower stamps most, most of my stamping is for other females, this set has the versatility of solid and outline images so I can watercolor, if I choose, AND it contains one of the most frequently needed/used sentiments (Thanks).
SS contains my most favorite color in the world: Celery!

Seriously though I would probably keep rich regals and a fun set like either Loads of Love, Bow Wow or Unfrogettable. I would choose one of the listed sets because I like to watercolor and I also like to make fun cards and these sets lend themselves to many fun techniques such as spinners, shakers or pop-ups.
Looks Like Spring and Soft Subtles for me. I love the cards made with that set and the SS colors are my favorite for a "pretty" look. Great question and cool to see everyone's answers!
Loads of Love and Loads of Love Accessories (does that count as 2?). It seems like you can make a card for every occasion with these two sets. Earth Elements seem to be the natural choice to go with these sets.
Now having said that... I have neither set and am a soft subtles kinda' gal!
Hmmm, maybe I should rethink my next order....
lol ... believe it or not, I've actually thought of this before!!! Favorite Bear (if it has to be current, but really - Button Bear) and Earth Elements!
Heartfelt Thanks and Rich Regals...But we all *know* one and one will never happen in these stampin/scrampin homes! Nope NEVER!
But it is fun to decide what your favorite basics are...I must have flowers and a Thank You sentiment of some sort. But since you said one set...I would still have several non-set stamps hanging out with my Heartfelt Thanks!!!! LOL
I like using it with a tinted embossing pad so I can journal and then have the lines disappear! I suppose I could live without other stamps, but I wouldn't want to!
At the moment it would be Best of Cluck and Earth Elements, but if it was forever, I'd probably say Shapes & Shadows and Soft Subtles. But I wouldn't like it. :(
Petal Prints with Rich Regals (because you can use different techniques with this set)

bold brights, because they have all the colors, can be blended to make others, and can be lightened up with water. Set? Probably Summer by the Sea, but I also love Sage Advice. Toss up! Both are gentle, lovely sets that can be watercolored. Sage Advice has awesome sayings and cute little stamps that make great backgrounds or can stand alone. Summer by the Sea has the girl holding a sprig of flowers. I can paint her a thousand times and not get bored. Just gorgeous!

My all time favorite set has to be Boanicals! I love that set!!!! I could never part with it--unlike the 37 sets I will get rid of come July 1!! Combine it with Earth Elements and you have WOW!!!
Earth Elements and Spring Garden. The colors are "me" and I love the watercolor effect of this set. However, I just ordered Terrific Tulips so that may be the one set I can't live without!

Wow what a difficult choice! I would have to say bold brights and my shapes and shadows. I use that set for everything. But its depressing to think of just having one!::-D

I would keep Earth Elements, and then I would get a really huge plastic box and put my most needed stamps in it, and then that would only count as one set, right? No???
