I love ultra-complicated cards with tons and tons of details and embellishments - you know... those cards that weigh a ton. I love gazing at them and I love making them. It is almost always my goal to make an ultra-busy card like that but my laziness and time constraints almost always ensures that my cards come out more like CAS.
I like Stylish but classic & simple cards . So I choose CAS and Stylish Not single layer, but not too busy looking with lots of embellishments or busy looking DP.
I'm with Bugga on the difference between cute and cutesy and all in the eye of the beholder. I LOVE the Penny Black mice but House Mouse mice - and hoppers and gruffies - just don't really do anything for me.
And Sophie, your cards look lovely to me - your gorgeous colouring and drawing would get lost on an ultra-embellished card.

In commenting, I would like to point out that we are all tarred with a different brush and thank heavens we all have a great diversity in likes and dislikes.
I have been stamping for a very long time and find that I wander off to different likes all the time. At the moment, I am perfecting scenic stamping...tomorrow may bring a spurt of cute...maybe not....maybe....
I love the fact that my likes change with the weather....It keeps me interested!
I love CAS cards they are my favorite (they seem to come easy for me), but I don't like them too clean & simple (if that makes sense). I also like cards that are girly and cutsie. I also don't really care for sentiments only cards.
I also love the cas style of cards. There are so many wonderful gallery submission lately too. I am trying to perfect my one layer cards right now...very challenging for me.
A card can't be too CAS for me, LOL! I LOVE making one-layer, minimalist cards (that's just me) but I also love LOOKING at all sorts of card styles. Inspiration is everywhere, and a very embellished card can also be very balanced and have a strong focal point, too. It's all good.

Really it depends on my mood, the products I feel like working with, and whether I'm making the card for someone in particular. Mostly though my cards and scrapbooking end up 'stylishly elegant' which I love but (LOL) frustrates me endlessly. I so love to grunge things up but every now and then if I don't hold myself in check stylish and elegant is how the project turns out! Alz

I do feel that CAS needs to be defined so we are all of the same understanding. This term means different things to different people.
The mood of the card differs depending on the theme, who the card is for and the colors used. My cards are personalized for the person who will be receiving it. If I give a group of cards to someone, then the style is based on what I perceive of that person. After all, they will be sending/giving them to others so they should be a reflection of the sender.
I love lots of layers and embellishments. I know some of you have said that cards are over done, but I think those are cards that have "embellishment sneeze". You know, the ones with a brad or a button in a place that looks off, or ribbon just for the sake of ribbon and not because it really goes with the card. I like lots of embellishments if they add to the design of the card, not if they detract from it. Your image should always be the focal point and the embellishments and layers should lead your eye towards the image.
For me it is often about the DP and/or the color. Colors need to work together. It doesn't matter to me if it is monochromatic (all blues or all yellow), Bl/Wh cars or lots of brights... so long as the color and style are dramatic and eye catching - and yes, Bl/Wh cards can certainly be dramatic and eye catching.
Not a fan of overly cutsie.

I voted for "cute animals" and "plenty of embellishments." However, about the animals....I make a distinction between "cute" as in "cutsey" which I don't like, and "cute" as in whimsical, which I love.
Nicely said. I'm with ya on cute vs. cutsie.
