I can tell you how in Photoshop. If you have something different, you should be able to find a similar option.
I go into "Image", "Adjust", "Auto Levels". Be aware that whatever is lightest in the photo or scan is what will be considered "white" and everything will be adjusted to that. So if you put in a copyright statement that is on a white block, adjust the color levels before you add it, since it will always be whiter than any scan or image.
Usually I get great results with Adjust Auto Levels. But if that doesn't look good, undo it and try Adjust Contrast and see if that looks better. More than that, you'll need a book.
