Now, wrap you head around this one.....someone told me it's 128 days until Christmas! I don't even want to think that! It's not even Labor Day yet! Besides that, it's still to hot to think Christmas...in the high 90's here!

Oh, that is something to think about. That's why I do the Christmas Card Challenge. This year, I don't want to rush around like a chicken with its head cut off. I want to enjoy Christmas. So, I put on the fan, get a big glass of ice tea and sometimes I even play Christmas music. I make 10 cards a month. Join us! You'll be glad you did.
Truly the health care situation is important. We are fortunate in Canada to have all the basics covered and if your income is below a certain amount, you don't pay any fees. Some provinces include it in their taxes, others don't. But it is still a great system.
Here you go! I usually do a double batch at a time so I get 2 loaves but the recipe is for one. Also, when my bananas get overripe--really gross overripe, I just freeze them as they are until I want them, then I let them thaw and use.
Banana Chip Loaf
scant 1 cup white sugar
1/4 cup melted margarine or butter
1/4 cup sour cream
3 thawed overripe bananas
1 1/2 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup chocolate chips-you can use less, I often do.
You can also add coconut if you wish. I don't.
Break eggs in mixing bowl. Beat until light and frothy. Add sugar, margarine and sour cream. Beat well. Stir in mashed bananas.
In another bowl, combine dry ingredients. Add to banana mixture and blend gently just to combine. Don't over stir. Transfer to greased loaf pan. Bake at 350 in preheated oven. Bake 60-65 minutes until inserted toothpick comes out clean. (Except for the warm chocolate chips that linger) Turn out of pan after 10 minutes.
On the run today. Our church is sponsoring a kids Sports camp this week, every day from 9-12. Tonight is a community potluck BBQ. So I am home to do a load of church tea towels from snack time, get my salad ready for supper, pick up lawn chairs... and pick up the buns from the bakery.
Quiet & slow day over here. My Bible Study partner had to reschedule due to car trouble. However, the quiet will change -- the kids are home from school now. That's okay. It's joyful noise that won't fill the house forever.
Umbrella not needed yet today. It's not the ultimate excercise, but I'm walking to & from the school with my daughter. Everyone understands that excercise is a good thing, but it's difficult to put into one's schedule. U are wise to try; and wiser yet to do! U all have a great day!
