Last night we had ham steaks with baked potatoes, Schwan's broccoli with cheese sauce, and pineapple sauce for the ham. Delish!
Today, I'm thinking I will get some hamburger buns...I just bought some chicken patties from Schwan's, so I can make chicken pattie sandwiches and blue box mac & cheese. DH is recording this evening, so it needs to be fast. After which, I will be taking the kids somewhere so they don't make noise, probably the library and maybe ice cream for a treat.
Hoth2os, how do you fix the roast with pepperchinis? Sounds like something I would like. Do you use the meat in Tex-Mex dishes?
I got the recipe from here I believe.
I put a roast in the crockpot, poured in a jar of pepperchinis and a package of dry Italian dressing mix. Cooked on low all day. I will use the leftovers for burritos or something. (although it is almost gone)
I threw into the crockpot 1 lb of bacon, 3 chicken breasts, 2 cans cream of mushroom soup, a few shakes of onion soup mix, chicken broth and cream cheese. Added noodles and cheese right before eating and called it dinner. Served it with a side of peas.
We're having a pre-Thanksgiving feast...DH's brother is coming in tonight and we're hosting a couple of 'refugees' (not real ones) so I'm making enchiladas.
2 chicken breasts, cooked and diced
1 cup sour cream
1 can cream of chicken OR cream of mushroom soup
1 can Rotel (drained)
1 small (or just a ½) green bell pepper chopped
1 tsp garlic
tortillas
cheese (save some for the top!)
Optional Ingredients:
chopped onions
chopped jalapenos
small can green chilies
Mix all ingredients together except for tortillas and some of the cheese. Either spoon the mixture into the tortillas and roll up (put the rolled side down) or layer –tortilla / mixture / tortilla / mixture / tortilla. Bake at 350° for 20-30 minutes until it is bubbling. Sprinkle left over cheese on top and melt in oven
I think I'm using 3 chicken breasts tonight, because that's how I had them packaged in the freezer.
Anyway, these enchiladas are freaking awesome.

Thanks for posting this. We are going to try it tomorrow as we have postponed TG until Friday because I am sick. I have just had the worlds slowest cold so should be better by then, at least I hope. I have been thinking that I will be better the next day for 5 days now, but at some point it will be true, right? LOL Anyways, I needed a quick idea so this was perfect! Thanks!
As for me, I thought I would share a yummy and easy broccoli cheese soup recipe that I am making for lunch right now. I tend to be more of a taker on this thread and am hoping to change that by posting more often.
2 boxes of frozen chopped broccoli
1/2 cup chopped celery
1/2 cup chopped onion
1 cup broth
2 cups milk
2 tablespoons cornstarch
1/4 tsp salt
dash of pepper
dash of ground thyme
grated cheese to taste, I use cheddar but the recipe calls for swiss
cook the veggies in the broth with lid on until soft. In a small bowl mix milk, cornstarch, salt, pepper and thyme. add to the veggies. Cook, stirring constantly until thickened and then add desired amount of cheese.
I had Chevy's last night for my birthday. Tonight we are going to the Melting Pot. Yummy!!
Tomorrow we are having premade dinner from Safeway at Gma's. I was going to cook my own turkey breast, but Gpa is in the hospital, so we can't leave Gma alone on Thanksgiving.
Tonight is leftovers. We'll cook the ham tonight and make the croutons for the stuffing tomorrow and probably do the peanut butter striped dessert tonight as well. Then tomorrow morning early, Ryan will get up and put the turkey in the oven. And then it'll be up to me to finish the meal .
Melting Pot was so yummy Wednesday night. I love it there.
Thanksgiving dinner was blech. I do not like Safeway boxed turkey dinner. I barely ate anything and I'm impatiently waiting for my turkey to thaw so I can cook it on Sunday night with all the fixings. Gma was happy to have family around and I'm hoping FIL went to visit Gpa (his dad) who is back in the hospital.
Tonight we are eating the Salisbury Steak I made last night for fear of the ground beef going bad. It appears my husband has food poisoning, so not sure he will be eating anything.
Tomorrow we are spending the day in Napa wine tasting, so we will probably eat something quick for dinner as I'll be watching football.
DS is now sick AGAIN and I'm thinking that he got it from his cousin who is always sick. Fever and all the good stuff. UGGGG just in time for me to get sick right before the baby is due. NICE.
I have to see what he can keep down first- so I'm thinking that it just maybe grilled sammies for DH and I and some toast and maybe soup for DS.

My Thanksgiving dinner turned out really good, except the stuffing was a bit too wet. Luckily, after it's refrigerated, something magical happens when it's like that and it is perfect reheated.
So Friday, we drove to Kalamazoo, ate lunch with the in-laws and dinner at the Ground Round with my parents, then drove all the way back. Since DH now has trouble staying awake (it's his medication) I am doing all the long-distance driving now. Bleh. I hate driving at night.
Yesterday we had leftovers, and probably today too. DH has a gig tonight, so I'll be popping popcorn and watching the snow fall. Hopefully, the worst of it will hold off until he is back home. We're supposed to get 3" to 5" and my children are thrilled, thinking they'll get a snow day. We'll see...
I have a sick hubby so he hasn't eaten much in the last few days. I had Spaghetti Factory for lunch yesterday and ate the leftovers for dinner. Tonight I'm making a full turkey dinner and hopefully DH can eat a few bites otherwise there will be lots of leftovers!
I need to figure out what we are having for the rest of the week. I'm thinking of making some chili in the crockpot so I have something for lunch during the week too.
Hello All, thought I post the menus for this week. I have made Cranberry Oat Muffins for Breakfast, Chicken Lemon Orzo Soup for lunches and tomorrow we are having leftover pasta with brocoli, sweet Italian sausage and cheese. Tues. Wed. Herbed Parmesan Crusted Pork Chops and a side of Squash gratin with Sage and Gruyere and a Spinach Salad. Thurs. Fri. Bean and Barley Chili with Chipotle, Cornbread. I started my Xmas baking and made killer Orange Chocolate Biscotti. I have cookie dough chilling for Swedish Almond Cardomom Cookies. It is a good start.
I have no clue what we are having for dinner, depends on how DH is feeling. Although breakfast for dinner sounds heavenly.
I made chili on the stove yesterday, packed it all up for my lunch. DH packed my lunch this morning and sweetly put in turkey, stuffing, and a small cup of cranberries. I didn't have the heart to unload it and pack something else. Maybe chili for dinner!
I'm making shepherds pie for dinner tonight. Then we're off to a parent meeting at the preschool. We got our tree up and decorated last night, but I had to make an emergency run to Wal Mart to get more lights . I've got the majority of my gifts wrapped. Still have a few to finish making (tie blankets for the older 3 and a recipe book for each of my sisters and my grandma) and pick up something for my dad, Ryan, Logan and Emberlyn. Trying to decide what she'll get for Christmas and what she'll get for her birthday since it's on the 26th. But then I'll be D.O.N.E.
Well we didn't end up having the shepherds pie last night because we ended up eating at the Parent Meeting as it ran late. So that's what we'll be having tonight.
We didn't have breakfast last night either. DS had a sandwich and chips and Salsa con caso which he brought home from grandmas- strange kid. I can get him to eat spicy foods but when it comes to hamburger- won't touch it!!!!!
Tonight is my DH's birthday, so I am making his favorite meal - Open Faced Roast Beef Sandwiches, on Texas Toast (a must according to him) Any suggestions on what to make with it, that is not mashed potatoes - I just really don't feel like peeling potatoes, after peeling 20lbs for Thanksgiving : )
Just spaghetti tonight for us--nothing fancy. DH has bowling tonight, I have a headache, and I'm going to attempt to create a tutorial for these album thingies. We'll see how it turns out!

Did everyone have a nice Turkey day? Ours was....exciting. I went into labor Thursday night and stayed at the hospital until mid-day Friday, when it fizzled out out on it's own. Because I'm a couple weeks early, they didn't want to use meds to re-start it and sent us home. DH says she (the baby) is just teasing us. Looks that way.

When I went to make the spaghetti...yeah, no noodles. Argh! So we made bowtie noodles instead and ate it in bowls. Good thing no one was coming over tonight!

Sandy, can you share the chicken lemon orzo soup. I would love some right now as DH and I are fighting some bug. I just put on warm sweats and he hasn't taken off his jacket in 5 hours and has a lap robe around his legs.
