Wow... I just realized it has been almost a MONTH since I've been on here!! Ack!

Well, I won't catch up on all that we've had, but I'll post what tonight's menu is...

Italian Tortellini Soup

It is FABULOUS when the weather gets chilly and so easy to make.

1# Italian sausage (I use mild for the kids, but the zesty/ spicy is yummy, too)
1 can (14.5 oz) diced tomatoes, undrained
1 can beef broth
1-3/4 cup water
9 oz cheese tortellini (refrigerated) - ravioli also works
1 can cut green beans, drained
pepper to taste (I leave this out if I use the zesty sausage)
parmesan to garnish

1. Brown sausage.
2. Add tomatoes, beef broth and water. Bring to boil.
3. Reduce heat. Add tortellini and cook according to package directions.
4. Add green beans and heat through.
5. Season with pepper and parmesan cheese.

This doubles and freezes very well.

Boy how the best laid plans go amuck!! Still waiting to make Shrimp scampi. DH wanted Penne&Sausage, and tonight it is mushroom/bacon/spinach quiche & salad. No shrimp scampi...... boohooo!!! SammyStamper got me going with that one!!

Bummer! I love shrimp all ways. I like to take canned tomatoes, little white wine, garlic, shrimp - over penne - sprinkle with parm cheese.

Sarah - Thanks for sharing. That does sound yummy. Not quite cool enough here, almost though.

I got my hair done this evening, so we had burritos from a local place. We really need to eat some leftovers which will have to happen tomorrow as I don't want to throw out a bunch of food.

Last night was leftovers and tonight was leftovers as well- well Joey had leftover McDonalds- Jesse had frozen english muffin za's and I had frozen waffles. Not sure what I am going to do for tomorrow. I am doing Halloween Photoshoots in the morning and maybe the pumpkin patch or a photoshoot for a 4 year old...

Not quite sure yet- busy busy though.

It is finally getting cooler in the Bay Area, so we had a roast in the crockpot, rice, and roasted veggies. I'm traveling for business Tues and Wed, so DH is on his own and I get whatever I can find around the hotel and at the airport.

Hi! It's been awhile again, life keeps me busy .

Let me see if I can give a quick recap.

Sat. we had junk/munchie foods.
Sun. we had ham, cheesy potatoes and sweet potatoes.
Yesterday leftovers.
Today - homemade lasagna, garlic bread, salad and for dessert - homemade cheesecake. It's Ryan's 33rd bday today and that meal is tradition to have for his bday.

Boy oh boy- no one has been on so I shouldn't feel bad.

My computer crashed on Tuesday night and I lost everything. Geek Squad couldn't retreive anything so I am going to see if my SIL can get anything for me.

Needless to say haven't cooked much since I am trying to go through and download some more freebies for Digi scrapping and resaving all of my pictures- plus chit chatting with Stef and Jac. Hi girls.

So let me think- my brain is fried- HA HA HA. Alittle burned hard drive humor. Bad I know.

I made Cinnamon Batter-dipped french toast one night. Tomato soup and grilled cheese sandwiches another and then I can't remember the rest.

Tonight I am making steaks in the oven and under the broiler since it SNOWED HERE last night. Yes there is STILL snow on the ground. Uggg it's going to be ONE LONG winter if we don't get atleast SOME warm weather at some point.

Anywho back to my steaks. I am marinating them in one of the McCormicks marinade packets and instead of the vinegar I am using red wine. Should be delish. I will also make some baby red mashed taters with the skins still on and not sure what else...

We just had Bierocks for lunch. Dinner will be the turkey thighs I found marked down, with stuffing and mashed potatoes.

I woke up at 5 AM today (day off dang it!) and could NOT get back to sleep. I'm currently edging into uselessness.

I found some turkey thighs marked down, so I bought those. That reminded me I had a bag of Pepperidge Farm stuffing in the pantry, so I pulled that out, sauteed onions and celery, heated up chicken broth, and made stuffing. Well, you know there's usually canned green beans in the pantry, and there was one can each of mushroom soup and fried onions (Green bean casserole is a favorite of my husband's). And no meal is complete for DH without the ever popular potato, so I peeled, diced and boiled and mashed. And the thighs had all those lovely drippings, so naturally I had to make gravy out of them....And I had bought an apple pie yesterday, and apple dumpling ice cream (I'm looking forward to tasting that!). So, for dinner tonight? I made Thanksgiving. We decided we were celebrating Canadian Thanksgiving a couple days early!

It's just a hoot how sometimes a meal snowballs into more than you had reallt planned.

Yea. Finally got my shrimpies!! Not true scampi, but scampi style shrimp with roasted tomatoes over linguini. Yummy!! Been on a pasta kick lately. Had penne with vodka cream sauce and tomatoes, too. Easy peasy BLT's tonight. Tomorrow is Chicken Florentine.

Hi gals!

Tonight we're having homemade chicken taco pizza. Last night the kids had frozen pizza (we went grocery shopping and hunting for boots for the kids because it SNOWED here yesterday and Logan had b-ball practice). Friday night we had fried eggs, hash browns, bacon and toast. Thursday was chicken and italian potatoes.

This is my menu for this coming week:

Monday - Corned beef and Oriental Cabbage Salad
Tuesday - Crockpot chicken, either Lemon Pepper or Mesquite so the sides depend on what flavor I go with.
Wednesday - Pork roast, rice and sugar snap peas
Thursday - Pancakes
Friday - Stir Fry
Saturday is Pizza night again

It's a busy week here - Logan (providing how his attitude and homework is) is supposed to go to Hunter's Safety Mon, Wed and Fri and tutoring Tue and Thurs. this week. Then B-ball practice again on Sat. We weren't going to let him go to that but he needs an outlet for all of his energy/pent up frustration and a break from his sisters, mainly Ashlynn.

Dinner -- we've been back in that rut again...BUT -- I did make a KILLER pork roast last night. DH was supposed to put it in the CP, but forgot -- so I wound up roasting it -- and boy did it ever turn out great! I just seasoned it with salt pepper and garlic, and then threw it in the oven for a while -- about a 1/2 hour before it was done, I mixed up some onion soup mix and water, and poured it over the roast, let it finish...the meat was SO moist, and TASTY. yum.

tonight I think it will be some sort of chicken -- or ravioli -- I haven't decided yet -- what are you guys having???

Got a pot of spaghetti sauce simmering on the stove right now. Yummy! Cold and rainy (finally) so spaghetti just sounded good. Garlic bread and salad... Voila!! Dinner!!
Tomorrow steaks. Rain is supposed to slow down.

Wow - Snow! Blech. We had record rain in the last not even 24 hours.

I was going to make a pork tendorloin with roasted potatoes, yams, and onions but hubby wanted pizza, fine by me! I'll make it tomorrow night.

Jaclyn - I love corned beef! The salt doesn't agree with my blood pressure though.

I haven't been cooking much these days. Tonight the plan is steak, asparagus, and potatoes au gratin.

I made this soup last week and it was SOOO good. It's a variation of Paula Dean's Chicken Noodle soup.
************************************************** *******
* 1 rotisserie chicken
* 2 32-oz boxes of chicken stock
* 2 cups water
* 1 small onion, diced
* 2 cups sliced carrots
* 2 cups sliced celery
* 2 1/2 cups uncooked egg noodles
* 3 tablespoons chopped fresh parsley leaves
* 2 teaspoons chopped fresh rosemary leaves
* 1 cup grated Parmesan
* 3/4 cup heavy creaml
* Seasoning salt
* Freshly ground black pepper

Bring the stock and the water to a boil, add carrots and onion, cook for 3 minutes. Add celery and continue to cook for 5-10 minutes. Add egg noodles and cook according to directions on package.

While the noodles cook, remove the skin from the chicken and shred the chicken breasts finely. When noodles are done, add chicken, parsley, and rosemary. Add Parmesan and cream, if using. Cook for another 2 minutes. Adjust seasoning, if needed, by adding seasoning salt and pepper.

This turned out SOOOOO good. My husband is not a lover of soup, so I tweaked the recipe a little bit and almost doubled the amount of noodles, but cooked them separately. His turned into more of a "pasta dish" with lots of noodles and only some of the broth/chicken/veggies. Also a good tip if you have kids that don't/can't handle eating soup.

I'm on vacation but we have a condo so I have been doing some cooking. Gourmet stuff like burgers, brats, steak, sandwiches. Tonight we are going out to eat to celebrate our anniversary.

I ran my smoker FULL of meat yesterday, so I have a fridge full of smoked meats (2 boneless pork loin roasts, one boneless pork sirloin roast, two meatloaves, two briskets, a cut up cooked chicken from the deli, a boneless pork butt rubbed with greek seasoning, and two packages of hot dogs- one with skins,one skinless) We ate smoked pork loin tonight with fried potatoes and baked beans. I'll be portioning, packaging, and freezing meats for future meals. I work at a catalog call center, so it's going to be crazy very soon.

OH NO!!!! Sorry about the computer crash -- been there - lost my 2nd daughter's first year in pics I was able to salvage some that I had on FB, Myspace, etc, but still lost A LOT. I have the drive though -- some day hoping to have the $$ to send it out and get the uber smart forensics people to get the stuff off the drive.

I started backing my stuff up on flash drives, and then my BIL recently gifted us with an external hard drive that does auto back ups every Monday. It's been great! (It also has all my digi scrap/stamp stuff on there too!)

Congrats on the DT assignments -- yes, that stuff DOES tend to suck up a lot of time.

We've been running around alot, prepping for a big party we had for my girls this past weekend, but I did remember to take out some big fat pork chops to cook up for dinner tonight

i had a pk of that seasoned chicken you can get at the store(this one was bbq) and some cubed yam's in one of those steam micro bags....it was actually quite good, simple but good....

tonight, not sure...i have a ton of laundry to do and plus i have to see how my son is doing cause he found out today one of his teachers died. so it will prob be something simple tonight.....

okay I have a package of spare ribs that I need to cook tonight but have no idea how to cook them. I don't want to put them in the crockpot, Hubby says, "Make sure they are tender". Any ideas?

rub with whatever seasonings you like- I use either Lawry's garlic salt or Cavender's Greek, then put them in a roaster with a cover, and slice onions over top of 'em, and pour a beer or two into the roaster. Slap the lid on it and throw them in the oven until they are falling off the bone. Beer-tender meat- every time!

LOL! Your nose is going to tell you when they're about ready- they'll smell soooo good! Just stick a fork in 'em, when they fall apart they ought to suit the husbandly instructions to make 'em tender!

well when I took them out of the package THAT READ: Bone-In....they were all BoneLESS! I hope it doesn't make a difference!

Italian Tortellini Soup

It is FABULOUS when the weather gets chilly and so easy to make.

1# Italian sausage (I use mild for the kids, but the zesty/ spicy is yummy, too)
1 can (14.5 oz) diced tomatoes, undrained
1 can beef broth
1-3/4 cup water
9 oz cheese tortellini (refrigerated) - ravioli also works
1 can cut green beans, drained
pepper to taste (I leave this out if I use the zesty sausage)
parmesan to garnish

1. Brown sausage.
2. Add tomatoes, beef broth and water. Bring to boil.
3. Reduce heat. Add tortellini and cook according to package directions.
4. Add green beans and heat through.
5. Season with pepper and parmesan cheese.

This doubles and freezes very well.

all i have to say is, THIS WAS AWESOME!!!!!!! my kids(well not my mr. picky) ate it and wanted more!!! i dont think there will be any left for hubby when he gets home tomorrow!!!! i used the spicy hot sausage which added to the flavor i think....i think next time i might add some sort of bean and mushrooms too..again, this was fabulous!!
