Today? It's a team cookout, here at my house (my supervisor was going to do this at a park, so he didn't have to clean his bathroom!!!). He's grilling burgers and brats for us, since we won all three competitions last month at work. The girls are bringing sides and desserts. I'm making pea salad ( a Frugal Gourmet recipe, with bacon & green onions in a mayo/sour cream dressing) and a black bean and fresh corn salsa that's wonderful (invented by the husband where I used to nanny, many years ago). And I've baked a batch of triple chocolate Amish Friendship bread (omitting the walnuts I would usually put in- Mr. Picky doesn't eat nuts). I'm trying to figure out what else I want to bake- another different flavor Amish bread, or cookies? My two mottoes in life are: Nothing Exceeds Like Excess! & If It's Worth Doing, It's Worth Overdoing!

I love those mottos! Those are perfect.

I'm going to have to check out Amish Friendship as I don't know that one.

I made some pineapple salsa for our mahi mahi tonight. DH isn't too thrilled about the cilantro, but he will get over it. I have a feeling he will be eating his fish without salsa.

How do you make your cheesy potatoes? Sounds yummy!

The Friendship Bread is the stuff you feed every 5 days, and it ferments. Once it gets a foothold in your community, there'll be little baggies or margarine cups of starter everyplace you go! Really, though, the loaves you can make with it stay moist, freeze well, and are luscious. Worth spending 10 days breeding the starter, and you can always freeze it when you're tired of tending it.

I made my black bean and fresh corn salsa for the cookout last night, and it was a big hit. Lucky for me, several people took some home, since a single recipe makes a BIG bowl full!

I've enjoyed following this thread but very rarely comment because I don't cook. Not I can't cook, I don't cook (big difference). Oh and if you're wondering why it's because I'm single and I can't be bothered most nights.

Tonight I thought I should have something more nutritious than popcorn but didn't feel like having a salad.

I threw some chicken stock, curry paste and other spices, lentils and rice into my baby crock pot. It's perking away and shold be ready in about 45 minutes.

I did cook when I was single as I took the leftovers for lunch. I would make enchiladas, tater tot casserole, tacos, spaghetti, and anything else that froze well and I could reheat.

tonight I made chile rellano casserole

browned ground beef and seasoned it well
put it on the bottom of dish
layered on fresh roasted hatch green chiles
lots of cheese
poured beaten eggs w/milk over top
baked for 40 minutes at 350. took it out and sprinkled more cheese on it

IT WAS DELISH!!!!

We had McD's tonight as it was our draft night for Fantasy Football and DH wanted time to prepare! Tomorrow is concert food so Wednesday night will be turkey burgers.

I really want popcorn right now but it is almost time for bed, so I guess not. Maybe ice cream!

Mmmm, I've made this without meat and it was yummy!! I need to go back to the Farmer's Market and get more roasted chilies.

I have pneumonia, so lucky for me DH has done the cooking. Tacos last night, taco pizza with the leftovers tonight. Not sure what tomorrow holds, but I told him I'm done with tacos! (I can't taste anything, but still...)

Bummer on the sickies!

We had turkey burgers, corn on the cob, and coleslaw tonight.

Tomorrow is supposed to be apricot chicken but the first Oregon Duck game is tomorrow night so KFC might be in order! Coupons came in the mail today and made me crave it. DH has bowling on top of it.

My mama is coming over for dinner tonight - I'm making 3 new recipes (all from allrecipes.com):
  • Grilled Tuna Steaks With Dill Sauce
  • Lemon Zucchini and Cucumber Salad
  • Asian Coconut Rice (recommended by someone on this thread)

Yup, a little better today, but I slept until noon. Hm, the mention of apricot has me hungry for sweet and sour, which I make with apricot jam, but DH won't touch it. Maybe over the weekend, when I feel better. He can eat his chicken or pork bits naked, and I'll slop mine with sweet and sour sauce?

Does anyone have a good recipe for something that requires cabbage? I've got a whole head that needs used up, but I am not in the mood for slaw...Maybe cabbage rolls?

I did get some Greek Seasoning at the store this week so I can make gyros.

Just finished KFC which was super yummy. I need to figure out what we are having tomorrow. Sunday night we are going to the Melting Pot. We have a gift certificate that can only be used Sun - Thurs.

Hi ladies - wow, I haven't posted in awhile, things have been crazy trying to wrap up projects around the house and get the kids ready for school.

In all honesty, I can't remember what we've been eating ... Last night I think I made chicken fried rice, tonight Ryan threw together a VERY tasty chicken and pesto pizza (since it was pizza night)... Ohh I DO remember, Thursday we had frog in a hole and sausage links, Wednesday Ryan made a chicken sandwich thingy.. the kids REALLY liked it, I hated it (that's unusual for me to hate something he creates). That's as far back as I can remember.

Hi Jaclyn! Look how big that little guy is getting. So Cute!

We had Costco pizza and hot dogs on Fri, hamburgers with the neighbors last night, and tonight is Melting Pot. I'm getting off easy! I do need to cook tomorrow which I'm leaning towards ribs as I think we have some in the freezer.

I'll need to sit down and figure out my plan for the week and do some light grocery shopping.

I made bolognese sauce last night (tho I just call it 'meat sauce' lol) tonight - we're having boneless pork chops. Tomorrow, I'm going to try a crockpot chicken recipe with cream cheese, cream of chicken soup and a packet of italian dressing mix (the good seasons one)

we'll see how it goes

I haven't posted in quite sometime either- shame on me.

Tonight I made Chicken Chili at the request of Joey.

Last night was nothing- just sandwiches since I didn't feel like cooking and Jesse just said "yeah whatever you want to do" well when he gives me that option of course I'm not going to cook.

Sunday and Sat- we were gone and Friday was Pizza

We had browned butter and pistachios over tilapia tonight. Tomorrow night I'm trying the gyros in the crock pot. I'm working from home so I can put it on around lunch since I don't think it can go all day. Friday DH isn't coming home until late, so I'm on my own.

Tonight I just promised DH shepherd's pie. We've had smoked things since Monday (which is just fine with me, but he's not as much in love with smoked as I am!). I'll pull out the Tilia and seal up some future smoked meals for the freezer.

DH gives the Gyros a huge thumbs up, he ate two of them. I really liked them too. I used ground beef for mine. Thanks to I think Jaclyn for posting it.

Tomorrow I'm going out to dinner with a friend so I have no clue what I'm having.

We just had cold cereal tonight for dinner - it was toasty here today and I really didn't feel like cooking, I've been really tired lately.

Last night was left overs and the night before I made chicken parmigiana, garlic bread, green beans and angel hair pasta.

ok, please no one laugh....i have no idea what shepards pie is? i've "heard" about it mind you, but just never known exactly what it was or my mom never made it when we were kids type thing.....so on that note and after everyone stops laughing(lol)...what's in it??

It's a casserole dish, with a layer of ground beef on the bottom, then a layer of corn, topped with a layer of mashed potatoes, and baked until heated through with the tops of the taters slightly browned. At least that's the version we had as kids. Nowadays, I use a sloppy joe mix instead of plain ground beef. Some folks make it with lamb.

Can someone direct me to the crockpot Gyros recipe? It sounds yummy.

I agree it's a casserole, but not necessarily the corn. Mine has ground beef, fried up with onions, some tomato sauce, then carrots and peas mixed in, and topped with mashed potatoes. DH will not eat corn, and it's not traditionally British, although they serve tuna salad with corn in it over there! (Yuck!)
And it can be made more stew like with chunks of meat, and with lamb (shepherd's, right???). But the main idea is meat with some tomato based sauce (not a lot) and vegies, topped with mashed potatoes and baked til it's nice and hot.

I tried eating steak and kidney pie, but couldn't do it. I have a friend who'll make that (back home in Michigan) for DH, but she makes a separate one with steak and mushrooms if she has a sissy coming for dinner (like me!). I just cannot eat kidneys, or liver, or tongue. It's more a texture thing than taste. I grew up working in meat markets, and have handled all that stuff (chitterlings, tripe, hog maws, etc.) and I can't see how people can eat some of it. EEeeuh! Bad enough to have to handle t, not gonna eat it!

I make my shepherd's pie this way. Browned ground beef, mixed with cream of mushroom soup. Place that on the bottom, then top with corn or green beans (which ever floats my boat at that time), then the mashed taters, THEN cheddar cheese and bake. I serve it with garlic bread and my kids absolutely LOVE it.

I also have never made or eaten Shepherd's Pie! The closest I get is the cheeseburger pie recipe on the back of the Bisquick box!

Ah, but any of the Bisquick impossible pies are fun! I have an appetizer recipe with diced green chilies on the bottom, and two kinds of grated cheese, that's basically like an impossible pie.

Our church cook back in Michigan used to make shepherd's pie for Thursday night dinners. It's one of those easy cheap recipes. The only thing we had to tweak was she put eggs into the mashed potato topping, and folks did NOT like it that way. She was from northern England, maybe eggs were regional? And we all liked tater tot casserole, with french cut green beans and ground beef, with mushroom soup! And her stuffing bake (diced cooked chicken or turkey with cream of chicken soup, topped by Pepperidge Farm stuffing and baked) was a huge hit. I had to learn lots of those kind of recipes, since I got shanghaied into doing the Thursday dinners when she retired. Try cooking for 40 or so people every Thursday night, and only charging $3 a person. It was pretty tough to make ends meet, even back in the 90s.
