We had P-dub's sleepin in omelette tonight for dinner.

I'm going to try Gyros done in the crock pot tomorrow night for dinner.

Jaclyn - You will have to report on the Gyros, I love them!

We had ribs, corn on the cob, and Bush's beans tonight. Complete BBQ food. I have no idea what we are having tomorrow. Guess I should figure something out before I head to bed.

HA! The local grocery store had cooked peel and eat shrimp really cheap, so it's shrimp for me, and a tuna steak for DH. He'll probably snatch a couple shrimp, but he isn't into cold shrimp. Don't know what sides, probably salad for me, and naturally, potatoes and peas for the Brit.

I'm back to report on the Gyros.

YUM!

Totally a keeper. Ryan ate at least 2.

This is the recipe I used.

I did not use ground beef though, we used 2 small beef roasts and I used more of the Greek seasoning than it called for (I didn't measure, I just seasoned).

Jaclyn - I just printed off the recipe. I don't know about ground beef either, I would probably do a beef roast too. I'll have to try and find the Greek Seasoning too.

We had flank steak tonight with a thrown together rub and asparagus all on the grill. Heated up some leftover tortillas and there you go.

Tomorrow I have to go to LA for the day, so we will go out to our local Italian place that seems to be our "go-to" place when I travel. They treat us so well. Last time our appetizer was sold out, so they gave us a free one and another one, then our dessert got forgotten about so we had to wait, so we got free glasses of Port.

Sam - I found that seasoning at Wal Mart here. And I added a bit of water to the roast so it wouldn't dry out.

I also buy the Cavender's greek seasoning at Walmart, and I use it a lot. It's wonderful rubbed onto steaks to be grilled! I use it on pork steak, pork chops, heck, it's something I use on a lot of meats.

I haven't really 'cooked' a lot this past week or so -- it's been hot, muggy, and we've done lots of running around. Last night was DH's b-day, so we ordered Chinese, and I made him a 'cake' out of ice cream sandwiches (his favorite)...3 make a square, so I did 3 layers of 6 sandwiches, alternating the direction on each layer (for stability ) then I 'frosted' the whole thing with cool whip. It was a hit. well, for him anyway -- the kids wouldn't touch it whatever --more leftover for Daddy I guess...

Tonight will be chicken on the grill...haven't decided on sides yet.

Just got home from a long day out and about. Realized on my way home that I hadn't pulled out anything for dinner. Hmmm...

I'm thinking pasta and veggies. Simple and in the cupboard, not the freezer.

Fixed a chef's salad for DH (with way too much meat, which he loves) and tater tots.

Can I come!! I so want to make Shrimp and Grits. I watched it on Food Network and have been carving it ever since. And I'm not from the South but I wish I was!

Ended up with Pasta with "white cheesy sauce" and broccoli.

Tomorrow will be something simple since it will be cleaning day. I've had this cold/ cough thing for about 3 weeks and STILL feel like crud, so I'm not up to cooking much by the end of the day. May have to do the crock pot and try out some of those new recipes that Stef posted the link to.

We had BLT's tonight since it was sandwich night here.

Tomorrow is "breakfast for dinner" so we'll be having mini M&M pancakes, the kids haven't had those in FOREVER.

We didn't end up going because Tiergan was sleeping and Emberlyn just wasn't 100%.

I'm very impatiently waiting for the tomatoes to ripen, so we can do BLTs again. This is the only time of year I actually make them, since I'm a tomato Nazi. Only vine ripened tomatoes will do for a BLT!!!

sandwiches and tomato soup
pizza

my hubby is gettting constructive today with our old roommate and making a backdrop stand for me since people have been asking me to take pictures for them and having the backdrops taped to the wall isn't quite working for me.

I promised our old roommate a payment in food. He hasn't gotten a homecooked meal in quite a while.

So I am making hamburgers with onions in the hamburger, hotdogs, creamy cumcumbers, fresh green beans and chips with dip- mmmmm .

Yep, it is a chain of Fresh Mex, nothing in a can is used. We love their steak and shrimp fajitas and they have the best salsa. I just had to get a strawberry magarita.

Last night we had tri-tip sandwiches. DH stopped at the local butcher and they have them marinating for you so you just have to throw on the grill.

Tonight we got mahi mahi and scallops from the Farmer's Market but I was hungry in the afternoon while we were out running errands so we ate at Elephant Bar. We will have those tomorrow as I'm still stuffed.

Let's see...

-Thursday was grilled chicken (marinated in italian dressing), cheesy rice and broccoli.
-Friday was brats, potato wedges and corn on the cob.
-Yesterday I made bubble pizza and salad for lunch and then ate at a friends house for dinner.
-Today for lunch I used the leftover grilled chicken from Thursday to make...

Italian Chicken Wraps
(serves 2)

1 grilled chicken breast (marinated in italian dressing- leftovers), sliced into thin strips
2 tortillas
2 T mayo
1 T Italian dressing
2 cups baby spinach leaves
4 slices provolone cheese

Mix together the mayo and the italian dressing. Spread 1 T on each tortilla. Top each tortilla with baby spinach leaves and 2 slices provolone cheese. Next, place chicken strips. Roll up and serve with the extra dressing/ mayo mixture if desired.

-Tonight will be pork roast with rice and veggies. (hubby's request)

I can't believe the week is starting again already. This weekend flew by. At least next weekend is a 4 day weekend for both my 6yo (school) and DH (work). Can't wait!

Sound yummy Sarah!

I just sat down and make our menu for the week and the grocery list to go with it.

Sun: Macadamia crust Mahi Mahi and Scallops
Mon: Turkey Burgers with corn on the cob
Tues: Going to see Nickelback - Concert food
Wed: Grilled Apricot Chicken - (while grilling you add a mix of apricot preserves/red wine vinegar/canola oil/garlic) - new recipe
Thurs: tilapia with pistachio nut crust and browned butter
Fri: not sure yet

Hopefully many of these meals with make leftovers for lunches. Speaking of, I have half a blue cheese burger from yesterday to eat for lunch.
