Wow am I FAR BEHIND!!!!

Let's see:

Thursday night was a softball night so it was sandwich time here

Friday night we had my nephews "see you soon" party- sloppy joes, lasagna, chicken pasta salad, tuna salad, potato salad, creamy cucumbers, strawberry pie, and "buster bars" were served

Saturday night: leftovers

Last night: leftovers (Yup there was a lot leftover)

Tonight since it was Jesse's b-day I made his favorite copycat meal:

Applebee's Boneless Buffalo wings. He said next time not to put the hot sauce on- to leave it off cause I make the TOO HOT. Whatever- WHIMP is what I say

That sounds good Michelle!

My dinner was a complete bust. DH had to work late so I told him just to grab a burger so he wasn't starving, so I reheated some leftovers. BUT, I did get all the "fixins" cubed, so the kabobs will be ON for tomorrow.

Bummer Stef! I didn't make them either as I didn't care for condition of the meat. I hate wasting stuff, but I knew if I cooked it, I wouldn't eat it. I found some filet on sale so we had that with potato grill packets and green beans.

I have no clue what we are having tomorrow. Probably grilled chicken breasts in some sort of packet marinade, steamed artichokes, and rice.

The kids had left over steak (again) and pasta with alfredo sauce because we went to the beach once Ryan got home from work.

Tomorrow... Not sure. I NEED to get back on the menu track. Stupid heat messed it all up.

We're having shrimp cocktail and corn on the cob. I'm trying to use stuff up out of the fridge.

Oh, and I made Chocolate Zucchini Cake with a Whiskey Glaze for dessert

weeellllll...I forgot to take the chicken thighs out of the freezer. I think I'll be stopping to pick something up on my way home -- whatever it is is going on the grill...it's wicked hot here today...I really don't want to turn on the oven (or the stove). I like the idea of cold shrimp...but the kids won't eat it...

I'll figure something out!

Woot! I'm home for a while! I've been traveling so much this summer, that I feel like I'm a visitor in my own home!!

I need to sit down and make some menus, too. Right before I left for this last jaunt, DH and I stocked up on meat at Sam's so at least I have the "bones" of the recipes here. But there isn't a single fresh fruit of veggie in the house. The kiddos can only eat so many canned fruit before I start going crazy!

I got home yesterday, so I'll give you as far as I've gotten...

Last night: Saucy-baked Chicken, Rice and corn (frozen)- Yes, it is HOT here... and yes, it about killed me to turn on my oven, but that was all I could do. (No grill at our little apt.)

Tonight: DH started thawing some gr beef a few days ago... and then we lost power for 12 hours. The meat that was pink is now grey-ish brown. yuck. Now I'm not sure what to do.

Homemade leftover pizza for the kids, and a vege version for me - thin crust, slathered with hummus, topped with raw spinach, avocado slices and some tomatoes and scallions soaked in balsamic vinegar. I think it's fabulous, but no one else here will touch it.

I totally forgot the boys are over tonight, so they are ordering pizza and I'm thinking I might take myself out for Thai. I was going to say here, but they are jamming, so I think I'll go wander the aisles at Joann or Target.

Last night I caved. DH fed himself and two of the girls hot dogs and applesauce. I took 3DD out with me to run errands and have a "mommy date" since her big sis starts school this coming week. I let her pick dinner- Red Robin!

Tonight I really need to make a real dinner for the whole family. I'm thinking Hamburger Stroganoff or something like that. Not really inspired. Maybe chicken or pork chops marinated with some potatoes or something. Ugh. Any ideas?

We are having a frozen pizza tonight ( they are REALLY good these days!! ) but last night we had Chicken salad sandwiches, salad, and Dorito chips. We had a leftover chicken breast from the previous night, so I chopped it up and made the chicken salad....

We are having grilled chicken and steamed artichokes. I would rather go out to dinner, but that would be wasteful, so we are staying in. Maybe this weekend we can go out. Doesn't help that it is 4 pm and I'm starving.

I dredged the chops in seasoned flour and browned them on both sides in butter. Took them out and added 2 cans cream of mushroom soup and milk to make a gravy, put the chops back in, covered and simmered for 1/2 hr or so. The sides were corn bread, peas and mashed potatoes.

I actually came up with a decent dinner!

I marinated Pork Chops in a garlic, herb and wine marinade then grilled them on the George. I had some leftover marinade so I also marinated and grilled some zucchini. I found a box of Italian Creamy Garlic Rice-a-Roni and a can of green beans to round out the meal. It was a hit! DH was happy!

Tomorrow will be a crock pot recipe. Probably Beef and Noodles with frozen veggies. Something quick and easy since my oldest DD has her meet-the-teacher night. (It's from 4:30-6:30!! Such a crazy time to do it.)

Friday has the in-laws coming in from out of town. Ugh. But at least I'll be off stamping! (I love my in-laws, don't get me wrong. Company, any company, just makes it hectic in our little apartment.) I think that will be pizza night since hubby will be working and the crazy babysitting exchange will happen around dinner time.

Question for you ladies...

Was it on this thread that I read that you can use a can of pumpkin instead of the apples in TS's Nana's Apple Cake to make pumpkin bars? I have all of the ingredients (I think) and would love to try it, but want to know the specifics... if you know them.

I do just about the same as Jaclyn except hubby requires them breaded. So I bread them first, sear in butter, then put in the oven with cream of mushroom.

We love Shake N Bake around here though.

I did put BBQ sauce on them a few times, never thought before to do that.

I had a couple pounds of ground turkey thawed out, so I mixed in some freeze dried shallots, bran (I'm doing low carb-no breadcrumbs!), hickory salt, a little Lawry's garlic salt ( no other brand compares!) and a couple eggs. OK, it was too wet to make into patties, so I spooned it into a pan with some rosemary olive oil, and sauteed the little burgers/pancakes. Danged if they didn't taste fabulous! Cheesey-bacon potatoes and peas for him, grape tomatoes and broccoli for me.

It was, all I put in the flour was Lawry's Seasoned Salt, fresh ground pepper, salt and garlic powder.

Yep all you do is add one CUP of pumpkin in place of the apples then your egg.

I made Chicken Noodle Soup tonight.

I made two batches since my BFF is expecting her twins anyday now (she's 35 weeks) it ended up being enough for us for dinner tonight (with one bowl leftover for lunch for me tomorrow) and TWO freezer bags full. One for us and one for BFF!!!

Another poster asked for a recipe for Stuffed Green Peppers on another thread and after posting a link to the recipe I use, I think I'll go out to the garden and pick the peppers and make them tonight along with Really Rific Rice and Fordhook Lima's.

My FAVORITE FRENCH TOAST EVER

here's the recipe:

Cinnamon Batter- Dipped French Toast

2 cups pancake mix (any brand will do)
1 1/4 cup milk
2 tsp cinnamon
1 tsp vanilla
2 eggs
10 slices of bread

Heat griddle or skillet. Stir pancake mix, milk, cinnamon, vanilla, and eggs until well blended. Dip bread into batter; drain excess batter back into bowl. Place on hot griddle.

Cook 1-2 mins on each side or until golden brown. Sprinkle with powdered sugar and serve with syrup.


These are almost a pancake with a piece of bread inside, So YUMMY!!!!!!!!!!!!!!!!!!!!!!!!!

Today was our anniversary, 10 yrs. WOW.

We didn't go out, neither of us are feeling the greatest and no baby sitter.

Ryan made quesadillas using homemade pico de gallo and homemade lava cakes with real whipped cream for dessert.

it's pizza night in my house.

I am taking pics again of my BFF and her belly- she's due with Twins anyday now and I am also doing her SIL and her new baby.

I am making chicken salsa pizza for Jesse and I and then Joey will have his own mini cheese za.

Not sure yet tonight, but last night, a coworker gave me some tomatoes, so it was BLT night! OMG! I love BLTs!!!

OK, flat iron steak on the grill, grilled bell peppers and onions, the ubiquitous potato for DH, salad, and probably green beans.

I am EXTREMELY tired today- I think all the night wakings (no not a newborn anymore) are catching up with me. It's definatly going to be a nap day!

So I am making creamy chicken and biquits with some corn on the cob. Easy Peasy.

We went to Red Robin last night as DH needed jeans and JcPenny had them on sale. I have ground beef thawed so I'll have to do something with that tonight. Probably tacos since I have everything I need and it should be in the 90's here today so it has to be no oven required.
