As for dinner...

I really stretch things out and don't make very much if I don't have to. Snacks and extras are crackers, fruit snacks and popcorn- then fruit and veggies.

Take for instance. I buy fruit snacks when our grocery store has them three for $5 instead of buying the brand name ones that Joey wants. He gets a choice on what they have for sale. Juice- I buy Old Orchard- they have the 1/2 gallon jugs for $1.89 for the Apple/cherry, and strawberry, banana, apple. The other flavors can stay since they are over $2.50 per bottle.

When the deli has lunch meat on sale I stock up. They just had Sliced Pit ham on Sale for $3.99 a lb. Which is cheaper than the packs of either land 'o' lakes or even Carl Budding lunch meat. You can freeze this.

Meat products- I very RARELY buy at full price anymore and make sure that I stock up on reduced meat when they have it in the case. I can get center cut chops, sirloin steaks, roasts, chicken (which I can cook and use for whatever). I also take advantage of the BOGO and ad shop that way. What's nice is that we have a large chest freezer where I can put things for furture use.

And Veggies that you often use most can also be cut up and put in the feezer such as onions and peppers.

Fruit is alittle different- we typically just do strawberries, grapes and bananas. Other fruits I only buy when on sale.

I am not sure what it's going to come out for, price wise, for the month of August but I've got three days where we are having leftovers for dinner.

For breakfast is either cereal, yogurt and fruit or eggs and toast.

Lunch is: a sandwich with fruits and cut up veggies, mac and cheese, or a small pizza like totinos which is usually on sale 4 for $6

then dinner which I typically cook more of. Here was my dinner menu for JULY:

July 1st: Creamy Chicken and bisquits
2nd: Sub night
3rd: Frozen pizza
4th: Bacon wrapped- chicken
5th: Chicken legs with BBQ sauce with potatoes
6th: Tacos (beef)
7th: Grilled Cheese sandwiches and cut veggies
8th: Cajun Chicken Linguni
9th: Breakfast
10th: English Muffin pizza
11th: Thanksgiving in a Pan
12th: Pork Roast- We ended up at Space Aliens so I've this to use yet.
13th: Hamburger Helper (which I will NOT make ever again YUCKY!!!!!!!!)
14th: Hot ham and Cheese sandwiches with cut veggies
15th: Chicken Parmesan
16th: Sub Night
17th: Order Pizza
18th: leftover pizza
19th: Asain Beef Noodles
20th: Tacos
21st: Cold sammies and salads
22nd: Ranch Chicken pasta
23rd: Breakfast
24th: Chicken Salsa pizza
25th: Fish and Chips
26th: Pork Chops
27th: Hamburgers and Hotdogs
28th: Grilled Cheese
29th: Bacon Wrapped Chicken
30th: Sub Night
31st: English muffin Pizza

I used to eat Tamales alot I am going to try these!!!!

Hi Girls!

I need to get back into cooking after being on a mini-vacation and then traveling on business, there has been zero cooking going on around this house. I'm going to the store on my lunch break to at least get a few things. Tonight I'm making cube steak sandwiches with sauteed onion and mushrooms. DH will have provolone cheese and I'll have blue cheese. Side salad to go with it.

Tomorrow, I'm leaning towards a pork tenderloin and some roasted potatoes in foil packets. I'll make a few extras so we can have them with breakfast on Saturday morning.

I should be able to hit the Farmer's market this weekend so I'll get all my fruits and veggies and usually some fresh fish.

Tonight is our anniversary, but since I've imposed a "no spending" limit on myself, I'm cooking rather than going out.

Here's the menu:
Salad with Ginger Sesame dressing
Sushi rolls with Wasabi/Soy for dipping
Pad Thai
Ice Cream Sundaes for dessert

Mmmmm! I can't wait. Let's just hope DH gets home at a decent hour.

Last night we grilled hot dogs and brats and had a rice salad for the side.

Tonight we'll be grilling pork sirloin chops and making oriental cabbage salad as the side.

Anyone have a good easy recipe for cilantro rice like the kind they use in the burritos at Chipotle'

Thanks! Dinner was AWESOME! I was pretty impressed that everything worked out and the sushi rolls were a breeze to make! I was anticipating a bit of a disaster, but they were so easy. It took longer to actually cook the rice than it did to make the sushi. I'll post the recipe if anyone is interested...

No, but I wish I did...Love that rice! Wonder if there's a copy-cat recipe for it? Will have to Google and check it out.

It's gonna be another hot and humid day here. I have to go to Brunswick again today, DH has to work late so want something cool, filling and simple for supper tonight. I've got everything here except the lettuce so will pick that up and make BLT Chicken Salad.

1/2 cup mayo
1/4 cup of your favorite BBQ sauce
2 tablespoons grated onion
1 tablespoon lemon juice
1/2 teaspoon pepper
2 large tomatoes, chopped
8 cups torn leaf lettuce or iceburg lettuce
3 cups cooked chopped chicken
10 slices bacon, cooked and crumbled
2 hard-cooked eggs, sliced

Combine first 5 ingredients in a small bowl; stir well. Cover and chill dressing thoroughly.

Press chopped tomatoes between paper towels to remove excess moisture.

Arrange lettuce on individual plates; top each with tomato and chopped chicken.

Spoon dressing over salads, sprinkle with crumbled bacon and garnish with egg slices.

*For the bacon, I use the Real Bacon bits. Saves time and clean up.

last night was a flat iron steak cut into strips and stir fried, with onions, red, orange and green bell peppers, and sugar snap peas. I waited Until DH took his out of the pan, then used REAL garlic in the remainder for myself. He had tater tots and carrots with his, I served mine over lettuce, since I'm going low carb. It tasted SO good.

Tonight, who knows? If it's not too hot, maybe grilling something.

Lime Cilantro Rice
I love this rice recipe and make it at least once a week. It is just like the rice at Chipotle Restaurant. I always at least double the recipe. Leftovers freeze well.
1 tsp oil or butter
2 tsp fresh cilantro
2/3 C white basmati rice
1 C water
1/2 tsp salt
1 lime
In a 2 quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
Add rice and lime juice, stir for 1 minute
Add water and salt, bring to a full rolling boil.
At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed.
Add in the cilantro and fluff rice with a fork.

I want to eat at your house!!! I love pierogies!!!

I made baked chicken breasts, baked potatoes and green beans, with cucumers & onions in sour cream also for me. DH won't touch a cuke.

And since the chicken and potatoes were able to be left alone, I went grocery shopping while it cooked.

Saturday we went to the county fair that was in town. Pizza, corndogs, subs, cheese curds, ice cream and pop. I was fair fooded out and I just had a sub and ice cream.

Last night I made a pork roast, brown sugar carrots and boiled potatoes.

Tonight I we were going to have leftovers since that is what is on my menu, but wouldn't you know a big mouse came and ate most of the roast that was left over. Silly mouse, now I have to figure out what we are going to have. I have some chicken boobs in the freezer that I can use, a couple of them are seasoned with a cajun seasoning and a couple are plain... We'll see. I will post later on what I am making.

I ended up making some chicken boobs that I had in the freezer.

2 were cajun seasoned
and 3 were plain

then I cut up some taters and sprinkled TS seasoned salt on them and threw those in my PC grill basket

Put everything on the grill.

it was an easy meal and okay. I am in the mood for some food with flavor. I will get that next week!!!!!!!!!!!!

Michelle - I love fair food!! I'm obsessed with cotton candy and my cat eats it too! Bummer on the big mouse, I hate when that happens. My DH will do that do me for lunches. I'll expect that he is eating a sandwich and he takes the leftovers instead throwing off my whole plan. I started putting "DO NOT EAT" signs on stuff.

Last night we had a light meal of steamed artichokes, cheese, crostini, and fruit. It was 100 here and too hot to do anything.

I went to the grocery store last night and got a good deal on halibut and shrimp and bought some ginger & seseame marinade to go with it. Green beans and maybe rice.

Tomorrow will be chinese chicken salad, I just buy premade dressing and load up the salads to each of our liking. DH hates cilantro and I could eat it daily!

I need to figure out something for Thursday before it arrives.

Last night we marinated a roast that Ryan had sliced in Lawry's Baja Chipotle with Lime Juice and then grilled it. For sides we had the lime and cilantro rice (thanks Sam!) and steamed broccoli.

Tonight we're having homemade chicken nuggets, fries, corn and baby carrots.

No problem! I double or triple it and then put it in freezer bags and freeze. That way I just pull one out and microwave when I need it.

I do the same thing with my coconut rice too.

Fair food...mmmmm...I had deep fried Oreos for the first time the other day...wow. I wouldn't eat them all the time, and I really can't eat mroe than one -- but that's a tasty little treat.

Haven't done a whole lot of cooking -- Sunday I did bread some boneless skinless thighs, and baked them...had some lipton's noodles and sauce and veggies with it.

Last night we had sandwiches. It was hot and muggy here -- I didn't want to cook anything.

Looks like we're in for that today too -- guess I'd better stop and get something to throw on the grill at home -- DH and the kiddos won't let me slack off for two days in a row

softball playoffs tonight- game starts at 6:30 so it will be sandwiches tonight. It was going to be cuban sandwiches thanks to STEF but I haven't gotten to the store and Joey's friend from Pre-school is coming over to swim. Pool or shopping- mmmm I think pool!

softball playoffs tonight- game starts at 6:30 so it will be sandwiches tonight. It was going to be cuban sandwiches thanks to STEF but I haven't gotten to the store and Joey's friend from Pre-school is coming over to swim. Pool or shopping- mmmm I think pool!
Oops! Lol. The pool does sound awfully nice, though.

We're having meatball subs and salad. It just feels "summery" to me, somehow.

I just back from the store. I'm sick of that place. I stood in line for over an hour because they had only ONE of their 20 lanes open and there were 16 people in front of me. You might think I'm exaggerating, but sadly, I'm not. It's terrible.

I am really pleased with how our dinner turned out. Considering I didn't have a recipe. I used Panko. Made the chicken strips nice and crunchy! Seasoned it with salt, freshly ground pepper, Lawry's and shredded parmesan cheese.

I love Panko. I make chicken strips at home too, much cheaper and better for you.

Sooo....what can I do with "Chicken Fried Steaks" that have yet to be breaded or cooked? I am looking to skip the "fried" part...any ideas?

I just found coconut M&M's yesterday - they are a limited edition flavor and they are good! I love coconut!!

I LOVE Panko crumbs! I expecially like them on fresh fish and baked zucchini.

I haven't been able to find the coconut M & M's ANYWHERE around here and I love coconut to boot, makes me sad .

Tonight we're having ground ring bologna sandwiches and chips - summery meal on this hot day.

I found the coconut M & M's last night at Walgreen's. They had them 3 packs for $2. OMG....I have already eaten 2 packs.
