Super woman Michelle!

Last night I ventured into potoato foil packets on the grill, they work really well! I'll be doing that more often. I made individual ones so there wasn't a ton of potatoes in each one to cook. Plus we had leftovers which I heated up for breakfast. I'll be doing that more often.

All I did was cube up red potatoes (fairly small), tossed with a little olive oil, rosemary, salt and pepper.

Tonight we will grill ribeye and corn on the cob. I'll steam the green beans. Still need to figure out tomorrow as it needs to be quick as it is bowling night. I'm leaning towards some sort of marinated chicken breast which can be grilled. It is well in the 90's here and will be remaining there for the next 10 days at minimum, so cooking indoors is not an option.

I'm going to roast some chicken thighs in the oven. Not sure about the sides just yet - if I can get to the store I may pick up some cucumbers and do cucumbers in ranch. Otherwise it'll be steamed broccoli/cauliflower. I made a banana cream pie for dessert. Can't wait to dig into that!

I love banana cream pie but DH is not a fan. I do have a cucumber I could lend you Denise! I like to chop it up with tomatoe and onion and add chicken and red wine vinegar and little olive oil. Then a few chunks of ciabatta bread.

THat is an easy recipe!!!

I make my own from scratch more of a cream pie the only part I cheat on is the crust (store bought graham cracker):

4 eggs (seperated)
3/4 sugar
1/4 cup corn starch or 1/2 cup flour
3 cups milk
1 tbsp butter or marg.
1 1/2 tsp vanilla

Combine
sugar and cornstarch in a sauce pan gradually stir in milk. Cook and stir (contiuious) over med. high heat until thickened and bubbly. cook and stir for two mins more. Remove from heat. slightly beat egg yolks with a rotery beater or fork. Gradually stir in about 1 cup of the HOT FILLING INTO the yolks. Pour egg mixture into hot filling in pan. Bring to gentle boil. Cook and stir for two mins more. Remove from heat and add butter/ marg. and vanilla.

Pour warm filling over sliced bananas into the pie shell.

I've also got a recipe for the meringue to go on top but we are just plain pie eaters- no whipped cream no meringue.

Prayers needed. Jackie will be having an emergency c-section about 2:00 this afternoon. Her blood pressure has gone out of control. The doctor thinks this is best for mom and baby.

PLEASE KEEP JAC AND BABY IN YOUR PRAYERS TODAY!!!

Thanks for the update Sarah as I'm not on FB. She made it within 2 weeks of her scheduled date which I think is better than she was thinking at one point. I'll be thinking of her today and her family.

Prayers for Jaclyn and the new baby.

I haven't cooked in....ages. It feels like I'm still living in a disaster zone. Tonight I was really in the mood for home made Pad Thai, but DH just called and said he invited some friends for dinner. Oh Yay! Ugh. In actuality, I think we're going to go out to dinner, but they want to come by to see the house. I'm thinking I'll have it ready for company in....8 months. ha ha. Oh well. Surely they'll understand.

Update: Jackie delivered a healthy baby boy at 2:31 pm, 7 # 11 oz 19 1/2" Mom is exhausted, baby is doing very well. We have not named him yet, Jackie and I will decided probably tomorrow. Thank you to everyone for your prayers

JACKIE UPDATE!!

Update: Jackie delivered a healthy baby boy at 2:31 pm, 7 # 11 oz 19 1/2" Mom is exhausted, baby is doing very well. We have not named him yet, Jackie and I will decided probably tomorrow. Thank you to everyone for your prayers.

I WILL KEEP POSTING AS I GET INFO!

And just to keep with the thread... I made chicken enchiladas tonight. Grocery store tomorrow because we don't have anything in the house after being gone for three weeks!

Tonight we had loose burger subs, on hot crusty sourdough bread, with lettuce tomato & onion (and mine had fabulous Greek dressing, DH's was plain- he's flavor phobic). They really hit the spot, oooh, baby!

Tomorrow night is smoked sausage, shells & white cheddar & those Prince Edward veg from Aldi (really good mix of baby carrots, green & yellow beans). We're going to the cheap show to see Angels & Demons, so dinner has to be fast, show's at 6! I already made the shells & white cheddar.

So happy to hear about Jaclyn and her new addition. How exciting!

contrapat - I laughed at the "flavor phobic" comment. Sometimes DH is like that and it get so annoying!

Nothing exciting at my house. Tomorrow we are going to see No Doubt but it is only 5 mins from our house, so no need to rush. Maybe we will have burgers and salad. I'm trying to convince myself that I don't need a big ole beer at the show.

Samantha, mine's a Brit, and everyone knows they like bland. And I'm a foodie! It's a true conflict of interest. He's out of town on business all next week, and I'm putting spices and garlic into EVERYTHING!!!!

I've got chicken, celery & onions cooking in the crockpot and will make chicken and rice later and serve it with a salad and rolls. LOL, decided to use the crockpot so I could get some serious cleaning done today here in the house, but so far I've only washed two loads of clothes, played on the computer and ate. I'm hopeless

Hi Ladies! Thank you for the thoughts and prayers!

We named our lil guy - Tiergan Lee (It means Strong Willed). I'm hoping to get a few photos of all of his DARK hair! We are both doing good - I'm sore (to put it mildly) but that's to be expected.

This is our lil man!

Polenta makes me randy!!

I make my own and LOVE it pan fried with butter, or topped with maple syrup.

I LOVE hominy too!!

I just heat it and add butter, salt and pepper. I add it to my taco soup instead of regular corn.

Okay... we had Ramen noodles and some garlic crescent rolls with peas and carrots. That's when I decided that we really needed to go to the grocery store as that was the BEST I could come up with given what was in our kitchen.

I just found this on Recipezaar and it's pretty much how I make mine. I use chopped white onion though. There's a few other hominy recipes here as well.

Tonight will be leftovers so it's a little of this and a little of that.

Thank you ladies!

We hopefully get to go home tomorrow, I cannot WAIT. This hospital bed is SOOOOO uncomfortable.

Ryan made the kids frozen pizza last night, I had my "special dinner" of a "chicken cordon bleu" (not good ), baked potato (which I forgot to order butter and sour cream for), a sundae - chocolate ice cream, chocolate syrup, chocolate sprinkles... way too much chocolate for me.

Well, you would think they would give a new mom something wonderful instead of the regular, run of the mill hospital food. Congratulations on your new little bundle of joy, and here's hoping someone brings you something you can actually enjoy to eat.

Jac, sorry for the icky food...if you were here -- they give you a nice steak or shrimp dinner complete with sparkling grape juice for you and daddy. You don't mind moving to NY, in case you decide to have another, do you??? They had taken that 'treat' away for a while, so I didn't get it with my first DD, but brought it back and I did get it for my second...it's a nice touch. all other meals were the usual hospital food, but I have to say, we're pretty lucky here...the food isn't half bad...

Hoping you get to go home tomorrow -- give the little man a snuggle on behalf of me, k?

Monday I made some GREAT grilled pork chops, with mashed potatoes and veggies. We cheated and ordered out last night...tonight I'm making casserole -- we have a parade, so I'll try to feed the kids before, and DH and I will eat afterwards...at least it's only one town over, it shouldn't be too late of a night I hope...

Tomorrow?? Not sure yet -- have to rummage through the freezer when I get home and take something out to thaw...

Okay I am alittle behind on posting the recipes and pictures of the new things that I have made over the last week.

Here is the Asian Beef Noodles:


Asian Beef Noodles:

1 package of Beef flavored Ramen Noodles
1 lb beef sirloin steak
1 jalapeno pepper, seeded and finely chopped
1 tbsp veg. oil
2 tbsp water
1 tbsp steak sauce
1 med. carrot, shredded
2 tbsp sliced green onion
1/4 cup peanut halves

Directions:

set aside season packet from noodles. Prepare noodles according to package; drain and set aside. While noodles are cooking, cut steak in 3 in strips. In a large skillet, stir-fry the beef and jalapeno in oil until meat is no longer pink. Remove and keep warm.

In the same skillet, combine the noodles, water, steak sauce, carrot, onion, and contents of seasoning packet. Cook and stir until heated through. Return beef to skillet. Sprinkle with peanuts.

Our thoughts- One we woud used two packets of the noodles and less steak. If you take a peek at the picture I didn't use the carrot, I used mixed veggies. This was good but it is something that we wouldn't make very often.

this is what we had tonight.

Ranch Chicken Pasta Dinner

2 1/2 cups uncooked penne pasta
6 to 8 tbsp butter
1 envelope ranch salad dressing mix
1 cup frozen peas and carrots; thawed
3 cups cubed cooked chicken or turkey

Directions:

cook pasta according to package. meanwhile in a large skillet, melt butter. Stir in ranch seasoning packet until smooth. Add peas and carrots; cook until tender. Drain pasta and add to skillet. Stir in turkey and heat through.

Jesse and I both really liked this. I thought it was alittle salty but that could be from the butter that I used, so I will watch that the next time we make it. The only thing that I maybe would change or add to it would be another packet of ranch. Jesse says that this is something that he would like to have again soon.

I had a wonderful dinner - my hubby was at a meeting so I was on my own.

I had Blueberry Muffin Shredded Wheat Cereal and pretzels with veggie dip. Oh, and iced tea. Easy and very little clean-up
