Jaclyn -- UGH. We did the whole 'single bathroom' gut job too, but I was NOT SUPER preggers...we only had DD#1 then - she was about 6 mos old...we ripped out EVERYTHING, swapped the placement of the toilet and the sink -- and for a while, the only thing in the room was the toilet -- with no walls and plywood floor...it was very, ahem, rustic . Good luck with the remodeling...

we didn't do much cooking over the weekend...went out for dinner Friday, Saturday was a birthday party, but I did cook last night. We had marinated top round steak on the grill, tossed salad, tater tots (DD's request) and fresh green beans sauteed in olive oil, garlic, and a little bit of red onion...they came out delicious, asn so easy too, I wish I had made more!

Tonight is beef kabobs on the grill, baked taters and the rest of the salad...

I went thru my Cooking Light magazines for some inspiration last night. We are having turkey burgers with goat cheese sauce and grilled asparagus. Dh and I love goat cheese so we will see. I'm not a big fan of turkey burgers but I'm trying to embrace them since they are better for you. I understand you have to season the daylights out of them. I'm open to any other suggestions!

Tomorrow night is Beer Can Chicken. Wednesday I think will be hazelnut crusted tilipia.

April 09 - I did locate the recipe online. The issue had several goat cheese recipes if you like it. I want to make the goat cheese grits this week too.

mmmm...tacos....

I decided instead of baked, to slice the potatoes, toss them in EVOO, kosher salt, fresh pepper...laid them out on a cookie sheet...sprinkled 1/2 with Bacon Bacon, and the other half with Spinach & Herb mix...mmmm it smells SO good in here!

That sounds really good Tracey!

We WERE going to have beef roast with mushroom gravy and mashed taters, HOWEVER ... by the time it was put into the crockpot it was after FOUR PM!

So instead Ryan picked up 2 rotisserie chickens. We had steamed white rice and cheesy broccoli with that.

I give the turkey burgers and goat cheese two thumbs up! I must have been channeling Tracey as I went to Target at lunch and bought a mandoline. I have wanted one for ages and then proceeded to make potato "chips" in the oven. I just lay down non-stick foil and spray with cooking spray and bake. I then made a blue cheese dipping sauce with fat free sour cream, blue cheese crumbles, and worshteshire(sp?) sauce. I was in heaven.

Oops Jaclyn- I hate when that happens! DH was all over me today because bowling started earlier than normal. I finally got annoyed and told him to either leave me alone and I'll have it done in time or go eat at the bowling alley!!

That is too funny Samantha -- since I didn't realize how many slicing 3 potatoes was going to make, some of mine didn't get super crisp, as they were piled on each other, but boy were they good... DD#1 even liked them -- SHOCKER!

I made the first batch too thinned and burned them. So thankfully I had Chris peel two potatoes and we started over again. I should have flipped them but I was being lazy.

Tonight is Beer can Chicken. I really want more potatoes!

Tonight we'll probably just snack. The kids had a LATE, LATE lunch and I've got a bug of some sort - otherwise if it's not a bug, it's just ONE more sign of impending labor .

Bathroom isn't going good at all... the ceiling in what will eventually be our room leaked through last night so now THAT has to be replaced. Mind you the baby could be here at any time, NOTHING is ready and we're supposed to have company one week from Thursday. Needless to say, I'm stressed and depressed and the kids are being HORRID.

I'm making Mojito lime tilapia, grilled corn on the cob and Santa Fe Salad tonight.

My mama's coming over to help me with some yard work so I'm feeding her dinner. I also got lemon cooler cookies and mango ice cream. I can't wait to eat!!!!

hey saw this dinner blog.......i always have a hard time because we're trying to watch our (shhhhh, dont say the "d" word.....)diets since we're going to gym and loosing weight and so on....just getting a variety with taste that is and not taste like sawdust or something to do with wood....lol....

so tonight, i just cheated and made beef stew....used those season packets you get from grocery store, beef stew meat, veggies(lots of them....) and potatoes(the small red ones quartered)........

i hope i find some "healthy" ideas on here....i love family circle, came upon a "fajita" recipe made from chunked turkey, light mayo, crasins and something else...i'll find it if anyone wants it...but it sounded gooooooood....

correction, lol....i just found the recipe for the fajita pita thingie.....very simple and maybe not so healthy....lol.....it has ranch dressing, chopped up craisins, scallions, diced turkey(kind of thick slices) and blanched almonds....ohyeah, put that into pita pockets....havent tried it yet, so no "taste" testimony......

It's a bagged salad mix that has lettuce, cheese, tortilla strips and a creamy salsa dressing. I also added 1/2 a can of black beans and 1/2 an ear of grilled corn on the cob.

It is yummy!!!!

Tonight we're going to have that roast I cooked up. It'll just be Ryan, Emberlyn and myself though because the older 3 are at my friends house for the night.

You can also take whatever browines you don't use and top with pudding mixture in a bowl for the EXTRA brownie.

Tonight it was chicken spaghetti and steamed green beans. Not fancy, but all three of the kids eat it without complaining....that there is a major victory in my day.

Tomorrow it will be white chili. I have the fastest and simplest recipe for the white chili. Boil a couple of chicken boobs and then shred them. Put a large jar or the great white northern beans (undrained) in a crock pot, add the shredded chicken, and then pour a jar of salsa (we like Chi Chi's Medium) on top. Crock pot it on high for about 6 to 8 hours....voila.

This is a really good dessert recipe too!

1/2 cup semi-sweet chocolate chips
1 package waffle bowls (you can find them by the ice cream cones)
1/2 cup white chocolate morsels
1 cup milk
1 package (3.3 oz) white chocolate instant pudding/pie filling
1 8 oz. container Cool Whip (thawed)
3 tbs. sliced almonds
1 container (6 oz) fresh raspberries (or strawberries or omit them all together)

Toast the almonds lightly. Melt chocolate chips in microwave and "paint" the insides of the waffle bowls with it.

Mix pudding with the 1 c. milk. Melt white choc. chips in microwave and then fold into pudding mix. Fold in cool whip. Spoon into waffle bowls and garnish with toasted almonds and fresh berries.

This is SOO good!

Man, you girls are getting me all SORTS of hungry for dessert, and I haven't even had breakfast yet!!!

We had spaghetti and meatsauce last night -- a hit with the kids...tonight another easy peasy -- probably chicken nuggets --we have a parade, so I need to feed them quick before we go.

Tomorrow -- another parade, but the kids are staying home with my parents...so I'm not sure what we're doing yet...

Last night I made French Toast using King's Hawaiian Rolls. I slice them in half and dip them in a batter of egg, milk, vanilla a PC Cinnamon Sprinkle Stuff (not sure of the real name but I LOVE it). They come out so sweet that you just add butter and there is no syrup necessary.

Is it wrong that I want to make the brownie pudding dessert, the waffle bowls AND the Hawaiian rolls french toast all at once?!?!

I have a huge sweet tooth!!

I just found this recipe. I think I'm going to try it this weekend, it's something I'm pretty sure that the kids will eat too.

here's the Cajun Chicken Linguini from the first thread!!!!

You can adjust the cajun to make it as spicy as you want.

4 oz linguni pasta
2 bonless skinless chicken boobs cut into strips
2 tsp cajun seasoning (I just shake until all chicken is coated the more spice the better in my book)
2 tbsp butter
1 green bell pepper, chopped
1/2 red pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 1/2 cups of heavy cream
1/4 tsp dried basil
1/4 tsp lemon pepper
1/4 tsp salt (I omit)
1/8 tsp garlic powder
1/8 tsp ground pepper
2 tbps grated parmesan cheese

Bring large pot of water to boil. Add pasta and cook until al dente; drain.
Meanwhile place chicken and cajun seasoning into bowl; toss to coat.
In a large skillet melt butter and saute chicken until no longer pink and juices run clear.
Add green and red peppers, sliced mushrooms, and green onions; cook until slightly tender 2-3 mins. Reduce heat and stir in heavy cream. Add spices and let heat through.
In a large bowl combine sauce and noodles. Sprinkle with Parmesan cheese.

Make brownies according to box, same with pudding mixes. Fold vanilla, chocolate and cool whip all together after pudding has set. Cut brownies into small chunks and fold those into the pudding as well. ENJOY!!!

You can also take whatever browines you don't use and top with pudding mixture in a bowl for the EXTRA brownie.

ps- jesse and i were eating this out of the bowl at lunch!!! too good just to dirty another dish. lol
