Here's the recipe for the brownies -

1 2/3 c. sugar
3/4 c. baking cocoa
1 1/3 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. chopped nuts or choc. chips

Add all ingredients into a large mixing bowl and stir. Add 3/4 c. melted butter or margarine, 2 eggs, 2 T. water and 2 tsp. vanilla. Stir well. Spread into a greased 9x13 baking pan. Bake at 350 degrees for 18-25 minutes or until toothpick inserted into the center comes out clean. Cool in pan and dust with powdered sugar if desired.

(the reason the recipe is written this way is because you can layer the dry ingredients into a jar to give as a gift and then attach the directions).

So, you put a warm brownie into your bowl, sliced up a banana on top, add a scoop or two of your choice of ice cream, top with hot fudge, strawberries, pineapple and then add the Reddi Whip. Mmmmmm total yumminess!

I am an absolute failure at making brownies from scratch....so the boxed mix is always the way I go-brownie banana splits...sounds YUMMY!!

Tonight we're having NY strip steaks with mushrooms, baked potatoes, and green beans..
I think that's my favorite meal of all time....I absolutely lovveee mushrooms and I saute them with red onion, butter and garlic..sooo good.

Hope everyone has a wonderful new years eve!

Happy New Year, ladies!

Last night I finally got around to making the meatloaf that DH has been craving. I had about 1/2 lb of uncooked breakfast sausage in the fridge that needed eaten, so I added it to the meatloaf and it turned out pretty great.

As a side dish, I tried the new potato dish listed on PW's cooking site. Fantastic!

Happy New Year!

We had ribeyes, scallop potatoes, and salad at a neighbor's house. Lots of wine to go with it.

I still need to figure out what we are having for dinner tonight. It is almost 2 pm PST, ugh. Maybe take out! Is Chinese open tonight, that sounds good!

Brownies - Here is the best recipe ever and fool-proof, I promise!

http://allrecipes.com/Recipe/Best-Brownies/Detail.aspx

I don't make the frosting, we eat them plain. Or I spread on peanut butter while hot and drop chopped up candy bars!

YUMM YUMM!! Tonight I literally threw together a meat loaf (because when Stef posted that she had it I got hungry for one)-it has basically everything BUT the kitchen sink...ground beef, ground turkey, onion, onion soup mix, bread crumbs, garlic powder, eggs, ketchup, and steak sauce...
we'll see how that turns out.
And of course we're having mashed taters to go with it...
so hopefully it'll be good!

Omg I am SO sick of junk food BLECH. We didn't eat until WAY late last night so we didn't have the brownie banana splits, the kids were just over tired and I was D.O.N.E.

Today ugh, went to my Aunt and Uncles house. There was a couple of different salads (one was a sub sandwich salad, was YUM!), lasagna (not so good), hot dogs and brats (BARF) and WAAAAAAAY too many sweets. So now I'm having a salad at home and will be going to bed here shortly. I'm not sure what we'll have for dinner tomorrow, honestly I'm finding it difficult to think 5 minutes ahead tonight, let alone almost an entire day .

One day this weekend though we will be grilling out (read: Ryan WILL grill out) a beef roast that has been marinating in the freezer for at least a month... MMMMM!

The meatloaf turned out..well..okay I guess. It was good-but kind of TOO oniony HA-so if I make it again I'd probably leave out the red onion. My sister just brought home some ice cream..so now we're having dessert!

Oops! I can't eat much onion, so I only use a packet of onion soup mix in mine. I might make one tomorrow as it sounds yummy. Ice cream sounds even better though!

My hubby is out getting the Chinese food, wish it would get here already, I'm starving!

I think tonight will be 'clean out the fridge night'. We'll have to do grocery shopping next week and if I get the fridge all cleaned out that's one less thing I have to do!

I think we are having leftover Chinese food for dinner. We have tons of it from last night, so DH said not to worry about cooking. Somehow I have a feeling we are going out for a late breakfast.

I really don't know what to make tonight.

Last night I had Campbell's Veggie soup.

Maybe it will be breakfast- atleast it won't take up too much time since the little peanut is now refusing to take a bottle from Jesse which leaves me about 2 hours of open time to get everything done...

She's pretty great. Of course, I'm not biased or anything....ha ha.

Tonight for dinner, we're having lasagna and salad and garlic bread. A few weeks ago I made up a couple lasagnas, in loaf pans rather than larger pans, and froze them, so I pulled one out for today. Since it's just the 2 of us (and Avery, who won't be taking part in the lasagna), it's the perfect size. Otherwise, we end up eating it as leftovers until we're burned out.

Today was DH's first day back at work after taking a couple weeks off to hang out with Avery and I. He wasn't very excited to go back, so I figured I'd make him something comforting for dinner. Hopefully, he won't have to work this weekend, as my days of going with him on weekend jobs are over.

So I've subtly and not so subtly told Ryan that I want hot and sour soup for dinner. Think he'll get me some? I doubt it.

Basically mix all together and bake at 350 degrees for about an hour or until done.

The Chinese food last night was OK, but that's about it. It's so hit and miss with this place .

I really wanted a mushroom swiss burger with fries tonight, but instead Ryan's making pork chops, fried taters and a veggie. Joy. I guess I can't complain too much since he IS cooking.

We're having spaghetti bake with garlic bread and salad tonight. It's usually pretty good-so we'll see how it turns out.

So this is what I made the other day. I posted it for my friends on Facebook so I am just copying and pasting it on here so it may sound a little strange.

Here goes............

Okay so I had a few people ask me for the recipe for my fresh pasta, marinara and meatballs. I always make my own sauce, but this time I made it totally different and it was so good. The homemade pasta was so much easier than I ever imagined.

SAUCE
In EVOO, sautee thinly sliced onions and minced garlic in a large sauce pan. (don't ask how much cuz I'm not a real measurer but I think I did one large onion and 6 or 7 cloves of garlic)
Add 2 super large cans of Tomato Sauce and 2 super large cans of Crushed Tomatoes and a couple regular cans of Diced Tomoatoes. (now you can use fresh tomatoes, just puree them in the blender or FP first....I have done this and it tastes the same so the cans are easier)
Throw in some Sea Salt, White Pepper and Italian Seasonings ( I use white pepper for this because then you don't see the black pepper flakes....doesn't really matter)
I also throw in a few shakes of Boar's Head Jalapeno pepper Sauce (we like flavor at my house)
Bring to boil then turn to simmer and toss in the meatballs....RAW! (and I made my meatballs like the size of a small apple)
Simmer all day. When you go to bed, set your oven on warm (the lowest setting) and put your covered pot of sauce and meatballs in the oven. The next day, take it out and keep it simmering again all day until you are ready to serve.

MEATBALLS
Lean Ground Beef, couple pounds
Hot Italian Sausage, Ground, pound or so
Bread Crumbs, just pour from the canister until you think it looks like enough
Ground Oatmeal, just as much as you want
3 Eggs
Italian Seasonings
Sea Salt (I think Sea Salt makes everything taste better)

I put all of the above in my food processor (with dough blade) and just let it mix. You can mix it by hand or Kitchen Aid with the dough blade.

When all mixed together, form meatballs. I made BIG ones. Toss raw ones in the sauce and let simmer. I lined a baking dish with the extras and baked on 350 for 25 minutes. They came out yummy too.

PASTA
1 cup Semolina Flour
1/2 cup White Flour
2 Eggs
2 T. EVOO
2T. Water
1/2 tsp. Sea Salt

Put dry ingredients in a bowl and make a well in the center. Add wet stuff to center. Mix well with a fork. Make dough into ball and cover with a towel. This takes literally a few minutes. Let sit in a warm spot for 30 minutes. (I put my covered bowl on the stove next to my sauce that is simmering for the warmth). After 30 minutes or however long, make balls and roll it out on a flour surface OR put it in your pasta maker like I did and jump up and down with excitement! It was SO COOL! It took seconds. Then run it thru the spaghetti or fettichini portion of the pasta maker and Voila.....toss in boiling water for 2-3 minutes and it is DONE! So freakin good! If you don't have a pasta maker, go get one! You will not want to eat pasta from the box again! Okay so if you don't go get one, then just use a pizza cutter to make your noodles.

Pour meatballs and sauce on top of Pasta and Enjoy! You can sprinkle with Parmesan Cheese, but that's fattening =)

Let me know how yours comes out. If it's bad, you probably didn't do it right!
